Amazon.com Review

If you think that eating healthy means giving up flavor and pleasure, you're in for a treat. Author Robert Siegel was an overweight gourmet cook heading for a heart bypass when he changed his eating and eliminated meat, dairy, and dietary fat. His next challenge was to revamp those healthy but boring recipes so that he and his dinner guests would feel satisfied, not deprived. Before long he was "The Healthy Gourmet," teaching thousands how to cook "fat free and delicious"--giving up fat but keeping the flavor.

Fat Free and Delicious contains 176 recipes, from appetizers to desserts, to please every palate. You'll find fat-free and ultra-low-fat modifications of traditional recipes such as Sloppy Joes, Lasagna, and French Fries (baked instead of fried); international favorites like Fruit Crepes, Teriyaki Noodles, Fiesta Chili, and Mushroom Stroganoff; and innovations like Mock Guacamole (with cauliflower, tofu, and peas), Savory Mushroom Gravy (only 7 percent fat), and German Carob Cake. Each recipe includes calories, fat grams, and fat percentages, and a number are marked "quick and easy"--ready in 15 minutes or less. If you're trying to eat healthier, this book will get you on the right path without sacrificing taste. Highly recommended. --Joan Price

From Publishers Weekly

Aiming to "restructure" favorite fat-filled dishes by substituting healthy ingredients, Siegel offers 176 recipes, none of which contains meat, dairy products, oil, sugar or white flour. Based mostly on vegetables, grains, legumes and tofu and arranged by courses (plus a special section on breakfast), the dishes might also appeal to vegans and those with food allergies. In these transformations, lentils simmer in Sloppy Joes; tofu is stuffed into Manicotti; Grape-Nuts and apple juice make a cobbler topping. Some of his ideas for replicating the "mouth feel" of not-good-for-you food classics succeed: Spicy Bean Pate and Mexican Potato Salad with Corn and Salsa are fresh and lively. But many recipes are long on ingredients (12, including guar gum, in No Oil Raspberry Vinaigrette), while others are short on instructions (no indication of how long it will take to brown the roasted whole wheat flour for Country Style Gravy). Siegel provides a useful "Glossary of Natural Foods and Unusual Ingredients," diet hints (always keep baked potatoes on hand for snacking), cooking tips ("saute" in stock or tamari) and a calorie and fat breakdown for each recipe.

5.0 out of 5 stars A Must-Have Book for the Conscious Cook's Kitchen, March 29, 2010
This review is from: Fat Free & Delicious (Paperback)
Sadly this excellent cookbook was ahead of its time and has yet to be discovered. It is an must have for the conscious cook giving little known information to create delicious healthy meals. The book originally came with an video of the author demonstrating his ingenious cooking tips.

I love the little graphic at the bottom of each page with number of servings, calories, grams of fat, and percentage of fat.

He also has a graphic on Quick and Easy recipes and "freezer friendly."

5.0 out of 5 stars Quick and easy recipes which taste fabulous, December 1, 2011
Amazon Verified Purchase(What's this?)
This review is from: Fat Free & Delicious (Paperback)
This cook book is a great resource to have for everyone although the recipes do not utilize meat, dairy, eggs, and / or fat.

Every meal prepared by these recipes is enjoyed by my husband and daughter and her friends because they taste good. Who knew that one could cook without dairy products, without eggs, and without meat and have resulting food that tastes better while being at the same time being better for you. The book has sections for breakfast, appetizers, gravies and sauces, salads, sides, main entrées, and desserts. Even the icing for cake is made without fat - a feat to be sure - but oh so good. Incidentally same "icing" can also serve as a spread on top of a cracker. It tastes and looks picture perfect for an afternoon snack for the girls.

I found this book after reading Dr. Esselstyn's "Prevent and reverse Heart Disease". That book indicated that a switch in dietary habits could avoid many potential health problems. Further exploration into the subject matter, which including watching the movie "Forks over Knifes," solidified this concept. The problem was that some of the recipe's included in the Esselstyn's book did not go over well with the rest of the family. My husband complained that the food / salads prepared by Mrs. Esselstyn's recipes just didn't quite measure up to his desire for steak and potatoes, or a sandwich rich with cheese and ham, so delicious but also so unhealthy. Mrs. Esselstyn recommended this cookbook as one of her resources and I am so happy to have found it.

A few of the recipes required ingredients with which I was initially unfamiliar: Tofu, miso, nutritional yeast, soy- or hemp milk, egg replacer and assortment of flours (really a broader spectrum of whole grains). Acquiring these pantry items made a huge difference in lackluster food to outstandingly great food. While it took a while to find these specialty items, it was well worth the effort.

In closing I recommend this cookbook without limitations because the resulting food is just delicious whether one is a meat eater or a vegan.
