Sadly this excellent cookbook was ahead of its time and has yet to be discovered. It is an must have for the conscious cook giving little known information to create delicious healthy meals. The book originally came with an video of the author demonstrating his ingenious cooking tips.

I love the little graphic at the bottom of each page with number of servings, calories, grams of fat, and percentage of fat.

He also has a graphic on Quick and Easy recipes and "freezer friendly."

This cook book is a great resource to have for everyone although the recipes do not utilize meat, dairy, eggs, and / or fat.

Every meal prepared by these recipes is enjoyed by my husband and daughter and her friends because they taste good. Who knew that one could cook without dairy products, without eggs, and without meat and have resulting food that tastes better while being at the same time being better for you. The book has sections for breakfast, appetizers, gravies and sauces, salads, sides, main entrées, and desserts. Even the icing for cake is made without fat - a feat to be sure - but oh so good. Incidentally same "icing" can also serve as a spread on top of a cracker. It tastes and looks picture perfect for an afternoon snack for the girls.

I found this book after reading Dr. Esselstyn's "Prevent and reverse Heart Disease". That book indicated that a switch in dietary habits could avoid many potential health problems. Further exploration into the subject matter, which including watching the movie "Forks over Knifes," solidified this concept. The problem was that some of the recipe's included in the Esselstyn's book did not go over well with the rest of the family. My husband complained that the food / salads prepared by Mrs. Esselstyn's recipes just didn't quite measure up to his desire for steak and potatoes, or a sandwich rich with cheese and ham, so delicious but also so unhealthy. Mrs. Esselstyn recommended this cookbook as one of her resources and I am so happy to have found it.

A few of the recipes required ingredients with which I was initially unfamiliar: Tofu, miso, nutritional yeast, soy- or hemp milk, egg replacer and assortment of flours (really a broader spectrum of whole grains). Acquiring these pantry items made a huge difference in lackluster food to outstandingly great food. While it took a while to find these specialty items, it was well worth the effort.

In closing I recommend this cookbook without limitations because the resulting food is just delicious whether one is a meat eater or a vegan.

This recipe book has amazingly good recipes and excellent cooking tips. I have tried several and you cannot go wrong. For a paperback book, I felt it was excessively expensive, but when you are eating one of the choice dishes, I guess it is worth it. Just don't spill on the book as it's inexpensive paper and not well bound. There are few Fat-free recipe books around and this truly is one of the best.
