I have tried two recipes from Fat-Free Desserts: the Chocolate Fudge Layer Cake and the Black Forrest Cake. I found both cakes excessively dry and lacking the proper texture generally found in these types of desserts.
The serving sizes are not realistic. 15 and 14 servings respectively for the two cakes from 8½" layers are next to impossible to cut, to say nothing of the calorie count for each cake. In proper serving sizes (8 servings per cake) the calorie count would be in excess of 680 per slice on the Chocolate Fudge Cake. The CHO count would be 140 gms.
No amount of doctoring can make cardboard-like cakes good. Ms. Pelligrin's book rates a 0 from me! A total waste of money.
