JOHNNY CAKES (FRIED BREAD)

1 tsp salt
1 tbsp sugar
4 cups flour
2 tsp baking powder
1 cup water
1/3 cup milk
2 tbsp butter

Large bowl: mix together flour, baking powder, sugar, and salt. Blend in butter. Mix in water and milk. Be sure to mix well. Knead into one big ball and let stand for 15 minutes. Cut into pieces of dough and roll them into flat cakes.

Deep fryer: Cooking oil should cover Johnny Cakes; cook until medium to dark brown. Drain excess oil on paper towels.

I once took my sister-in-law's Johnny Cakes with Dutch cheese to school and a classmate stole them, he was suspended for it. I can't really blame him because they are very tasty.

My friends always anticipate my unique dishes at parties with curiosity and I always manage to surprise them; many of the recipes have their very own tales. This book is for anyone who already enjoys exotic food and those who would like to try exotic food in the comfort of their kitchen. It is easy to follow the recipes and the food is exquisite. The thing I like about the book is that it would appeal to a diverse audience because it has Caribbean, South American, European and Asian flavor. I highly recommend this book. A must buy for expert and novice cooks.
