Book Description

February 16, 1995
130 dishes from the most popular areas of India: Delhi and the Punjab, Kerala, Gujerat and Rajasthan, Tamil Nadu, Bengal and Goa. Recipes include: Kashir Rezala, a Bengali Muslim dish using goat meat, lemon, milk, yoghurt and saffron; and Goan Bebinca, cardamom flavoured layered pancakes. Delight in the rich flavours of such tantalizing dishes as: Dosas (crispy rice pancakes stuffed with various fillings); Shukto (a vegetable curry made with bitter gourds and flavoured with mustard seeds, nigella, fenugreek and cumin); Appams (a dosa-style pancake with a mixture of tomatoes, onions and chillies as the topping); or Prawn Caldin (king prawns cooked in highly spiced sauce using coconut and fresh coriander). Sample the handed-down secrets of many an emperor's kitchen, the regions' experts or the ordinary villager's humble, but equally delicious, repertoire of home-cooked dishes. Readers can discover the history and culture unique to each region in this illustrated book, and savour the aromas and subtle spice blends of the Indian subcontinent in the cool comfort of their own kitchens.

One of the best Indian cookbook I've ever come across, though I've tried 3 Madhur Jaffrey books and they are all excellent. This particular volume has recipes she collected from various family cooks. Beautiful pictures and details about the regions of India.

This is a wonderful introduction to Indian Cooking with clear explanations. I have owned this book for many years (I believe it was one of the first of Ms Jaffrey's to come out in the UK) and learned many techniques from this. It is still one of my favourites. I purchased it for a friend who is thrilled. Once you learn the basics, it is easy to adapt to your own style and taste.

5.0 out of 5 stars Madhur Jaffrey's Flavours of Indian, March 19, 2004
By
Adrienne (San Francisco,) - See all my reviews
This review is from: Flavours of India (Hardcover)
As a child of Bengali parents, [indian] food has always been the norm for me. So, after I left for college with day after day of pizza and top ramen, I found myself absolutely craving my mother's cooking which I couldn't have due to the 2,000 miles that separated us. To remedy the situation, my mother sent me this book and I swear by it! The majority of the recipes that I have tried have become regulars in my repertoire, but I do warn you that they do take some time and skill.

(Try the Bhopali Pilaf w/o peas and carrots, it rocks!!)
