Up until the past few years, flax was the concern of the clothier, not the cook. Everyone knew that flax produced linen. Then came the discovery of flaxseeds' benefits for good health. Elaine Magee's The Flax Cookbook lays out the nutritional arguments for consuming flaxseed: fiber and omega-3 fatty acids. One of the bases of the arguments for consuming more omega-3 fatty acids is that they block bad omega-6 fatty acids, which appear to be culprits in the onset of heart disease. And flaxseed provides both soluble and insoluble fiber, both of which have benefit. Because it's a crunchy little seed, flaxseed is particularly adaptable to bread recipes. Magee's flaxseed muffins get a boost of fruit and fiber both from a base of raisin bran in the batter and a bit of maple syrup that enhances the muffins' flavor. Her clever approach to basic flaxseed bread calls for choosing among twenty-plus ingredients as part of the bread's flavoring--apples, carrots, dates, peaches, pumpkin, and zucchini among them. I'm THE RECIPE DOCTOR and my motto is...changing the way America eats, one recipe at a time! My other motto is...healthy food isn't going to do anyone any good if no ones eating it--it HAS to taste good and be easy to make.

So, are you with me? I spent a year researching all the research examples of FOOD SYNERGY (how components within food and between food work together in your body for maximum health benefit) and the result was one of my favorite books: FOOD SYNERGY (Rodale, 2008). If you don't have a lot of time, read the introduction and go straight to chapter 7. This chapter will blow your mind...it's the "aha" chapter and it puts everything together and shows you how the 10 synergy superfoods can transform your diet. The rest of the book is filled with fun and easy to make recipes and each recipe includes "food synergy notes" which list for you the various food synergy partnerships represented in that recipe (and there are usually at least 3 in each).

My next book is coming out in Spring 2010, TELL ME WHAT TO EAT IF I SUFFER FROM HEART DISEASE, and it's going to help anyone who is at risk of heart disease or has heart disease. I'm really excited about this book because it includes and makes sense of the latest research advancements. I had several well known cardiologists review the book and I'm thrilled that they loved it and thought it would help their patients greatly.

On a lighter note... I often get asked what my favorite type of cooking is and hands down it's good old homestyle cooking...you know...fruit crisps, lasagna, oven-fried chicken, chocolate chip cookies, etc. Nothing too fancy, just delicious! So, imagine how much fun I had working on my cookbooks "Comfort Food Makeovers" and "Fry Light, Fry Right!."

I love to "makeover" all your favorite recipes into healthful versions that taste just as great but have less calories, fat, and saturated fat and more smart fats (like omega-3s), and fiber and nutrients.

First, there's some really good information on flaxseeds in this book and that's why I'm giving it four stars. Some of the muffin recipes sound good to me, but that's about it for the cookbook portion. Pancake syrup and light corn syrup are common ingredients used in baked goods. Most of the smoothie recipes call for ice cream or frozen yogurt (sounds like a milk shake to me). As for the rest of the recipes - just add 1/4 cup ground flaxseed to whatever you cook.

I was given this book as a gift and recently started going through it, reading all the information and tips and making some of the recipes and I had to write in to tell everyone about it.

I don't know what I valued more--the scientific information on flaxseed in the beginning, the 101 practical tips on how to buy, store, grind, and use flax, or all the recipes!

After doing a search on amazon I realized this is the only cookbook that features GROUND flax and not flax oil (which Ms. Magee points out only gives you the omega-3s from ground flax but not the several other powerful components that you get with ground flax.

I plan on giving this book to several friends for the holidays along with a nice bag of ground flax to get them going.

I've been a vegetarian for over 20 years, organic grains, fruits and vegetables are a priority. The recipes in this book include the following items: canned fruit in syrup, JIF peanut butter, Rice Krispies, caramel topping, white flour, white sugar, chocolate chips, raspberry preserves, sweetened condensed milk, frozen white bread dough, not to even mention the chicken, bacon, and other meats. Does Elaine Magee think that by adding 1/3 cup of ground flaxseed she can "undo" all the junk???

I would rate is "minus 10 star", if that option were available. (of course, no one remembers subjunctive mode anymore)
