About the Author

Alister D. Muir is a Research Scientist in the BioProducts and Processing Section of the Saskatoon Research Center of Agriculture and Agri-Food Canada. He has got a Ph.D. in Botany from the University of Canterbury, Christchurch, New Zealand in 1980. In 1998 he joined Agriculture and Agri-Food Canada where his research is focused on the isolation and purification of plant components with potential nutraceutical, functional food, or pharmaceutical applications.

Neil D. Westcott is a Research Scientist and Section Head of the BioProducts and Processing Section of the Saskatoon Research Center of Agriculture and Agri-Food Canada. He has a Ph.D. in Chemistry from the University of British Columbia. Dr. Westcott has conducted research on the environmental fate of insecticides, biological control of insects and more recently on the isolation and purification of phytochemicals that have potential uses for both food and non-food uses.
