Beautiful book with some great recipes. I can't get enough of the Jalapeño Cornbread! My girlfriend (a vegetarian) and I (a carnivore) finally have a cookbook that keeps both of us happy.

I really wanted to like this book - but began to have my doubts when I opened it and began to look for flexitarian recipes. Less than a third are, if you define "flexitarian" as recipes that may be made with or without meat. Even the entrees are less than half flexitarian - 46 entrees, only 22 of which allow for the optional addition of meat, fish, or poultry. As for...

I really enjoyed this book and use it all the time! There are lots of easy everyday recipes, beautiful and clear photos, and best of all -- almost all of the recipes can be easily customized for both vegetarians and meat eaters alike! As a staunch carnivore, I can definitely vouch for the flavor of recipes containing meat. I got it as a gift, but the proceeds benefit two great nonprofits, so you don't have to feel guilty about your purchase.

As a vegetarian living in a carnivore household, we have battled flexitarian eating for years....my cookbook shelf has been hopeful for a book that would allow home cooks to have an uncompromising approach to dishes that please both palettes at home.

I really enjoy making the easy to follow recipes, and my family enjoys eating them. The quinoa with tempeh and the baked tofu are hits for my family...they might even mistake me for an haute cuisine chef.

An entertaining must-have for vegetarians living in a carnivore household!

My girlfriend doesn't always like to eat meat so this seemed like a great gift for her. I was spot on, she loves this cookbook! Meat or not, the recipes are awesome and the way the book is laid out is really cool too. We eat mostly vegan, but sometimes I use a little cheese and the occasional fresh piece of salmon or tuna, so we're truly Flexitarians. Most of these recipes are very simple and all made with whole foods. I've given a couple copies of the book as gifts and when one of my friends received it she said she couldn't wait to sit down and check it out. One of my favorite recipes is the Green Onion Griddle Cakes. It's listed as a "Morning After" recipe in the book, but I've served it for an entrees receiving great reviews at the dinner table.

Just got my copy in the mail and I can't wait to try out some of these recipes, which are interpretable for kitchen dunces like me. And its great to know that the proceeds benefit two amazing charitable programs, Yoga Bear and Slow Food (which I got to enjoy while in Italy also!). Looking forward to some delicious meals.

This cookbook is full of recipes that can be used by vegies, vegans and meat eaters. The illustrations are beautiful and the format is very user friendly. With the added benefit of supporting two worthy causes, this is a must-have for any socially conscious cook!

This is a great book to use when you're creating menus for large parties. The first set of pages offers up menus for different types of gatherings.

The recipes are easy to follow and taste great! (I was a contributing/test chef). I highly recommend this book, makes a great gift and is easy to use for flexitarian cooking.

I have a few vegetarians around that I cook for regularly but love to cook meat dishes for parties - this is a great cookbook if you just love great looking and great tasting healthy food. Of course, the fact that it's for a good cause is just peachy/icing on the cake/insert food pun.
