The AMCO Food Service 10-Inch Pie Pan, is one of my favorite Pie Pans, because of its size and how well they are made, over 10 1/2 Inches Wide and very Deep, I got two of them, Great Price, nothing Scratches them, I wash them by hand after I make Potato Pies, Quiches and other Dishes and sometimes even Pies. I love to make flakey pies and this type of pan is my favorite. I use several recipes, but the secret is temperature. Keep the flour and other ingredients very cold until baking. I measure shortening in a measuring cup partly full of ice and water, then use the ice water for any liquid.

When making whole wheat crust, put a little egg white (you can buy it dry) in the dough to hold it together better, add other ingredients, roll out (cold), and use a good, heavy aluminum pie pan like this one for a tender, flakey crust. Don't forget to cover the crust edges with a strip of aluminum foil to reduce scorching.
