One of the problems with commercial salad dressings is the quality of oil used. The oil is extracted from the legume with hexane, a solvent. A superior way is to extract mechanically.
These egg-free "mayonaises", are properly sold refrigerated, to protect against rancidity without the use of preservatives. There are several varieties available, the best being "expeller pressed", meaning the oil was extracted at very low temperatures.
The taste rivals that of the best store brands, with the added benefit of using fats that are healthful and don't stress the liver. Not cheap, but you are paying for a a superior product, at least health-wise.

I am not a vegetarian. I would say about 85% of my diet is though. Years ago, I had loved mayo. I know. Gross! But I decided to try this stuff and now it is all I use. It is heart friendly, environmentally friendly and taste really good. I have turned many of my friends onto this stuff and despite the price all agree it is worth the price.
