If you have need of a fairly comprehensive reference for most chemical reactions that have something to do with food, this is an excellent text. Warning this is really not a text for the layman.

Excellent sections on various types of food chemical groups such as Lipids,Carbohydrates, proteins, etc... Many chemical groups have multiple sections concerning their common use, function, stoichiometry and alternative uses within the context of food.
