The balanced coverage found herein covers many states ignored by previous food writers. From prehistoric times there has been considerable mixing of cultures and cuisines within India. Today, the endless variations in cuisine reflect religious, community, regional, and economic differences and histories. Sen, a noted author on Indian cuisine, consummately encapsulates the foodways in historical context, including the influence of the British period (the Raj). Among the topics covered are the restrictions of various religions and castes and the northern wheat-based vs. the southern rice-based cuisine, with an extensive review of each regional cuisine with typical meals. She characterizes the only-recent restaurant culture, with mention of Indian fare offered abroad. In addition, the Indian sweet tooth so apparent in the dishes made for many festivals and celebrations is highlighted. The roles of diet and health are also explained, with an emphasis on Ayruveda, which is gaining support in Western countries. Colleen Taylor Sen is a food historian and journalist specializing in the food of the Indian subcontinent. Her articles on food, restaurants and travel have appeared in Travel and Leisure, Food Arts, Chicago Sun Times, Chicago Tribune, Christian Science Monitor, Yoga International, Toronto Globe and Mail, and other publications. She has been a participant in the Oxford Food Symposia since 1995. Born in Toronto, Canada, she lives in Chicago with her husband Ashish and their Cardigan Welsh Corgi Gopi.

I bought this for a research paper in my Eastern Religions class. My topic was Hindu food and I was having a terrible time finding a book that was not an Indian cookbook. This book was perfect for the task. It explained the history of Indian Cuisine, Indian ingredients, the importance of Indian food historically and presently, and it provided an unique and valuable insight into Hindu and Indian culture in light of food. Great and easy read--though it is a little pricy.

Plenty of college-level texts cover Indian history and culture with mention of food - but few focus exclusively on the connections between food and culture as does Colleen Taylor Sen's Food And Culture In India. Using a historical approach, Indian culinary expert Sen provides an analysis of how cultures and cuisines have mixed within India from prehistoric to modern times. There are recipes peppered throughout, but the heart of Food And Culture In India lies in its cultural approach and college-level collections will consider it a valuable addition to any in-depth section on India.

As the author says, this is not a recipe book. What this book does is that it meshes together extremely well the relationship between a complex culture and its culinary heritage. Replete with historical tid-bits, cultural trivia, origins of different dishes that we have become used to, this is a simply marvelous piece of work that will satisfy even cynics. Whether you are into food or history, this is a must-read!
