This is a first attempt to establish a canon of a hitherto unrecognized body of work, the literature of food and drink. It contains most of the authors you would nominate as classics, and has long selections from their work - no snippets, odd paragraphs, or bleeding chunks torn from the body of the work. Everything in the volume is satisfyingly complete. It also has a few surprises - the classics of the future.
