The spices of Morocco are favorites and "The Food of Morocco" won't disappoint! Even though we don't eat meat or poultry, there are so many wonderful vegetarian and seafood dishes to choose from that make this book more than worth the price.

The fish stew is truly one of our favorites and we have made and shared this dish on many different occasions. From roasting the peppers on gas burners, chopping the onions and cilantro, and adding fire-roasted tomatoes, cumin, harissa, bay leaves with fresh caught chunks of local white fish, we always enjoy the preparation of this really tasty and beautifully finished stew.

The vegetarian recipes using pumpkin, eggplant, lentils, broad beans and preserved lemons are are all tasty, healthy and fun to make. I love having the beautiful photography of all the finished recipes and a glimpse into the history of the food, Morocco's culture and those intriging markets of Morocco.

Bought this book and was so amazed by how tasty the dishes were I decided to actually visit Morocco. I just came back from Morocco and have to say this is the most authentic cookbook I have every purchased. The history behind the dishes was definitely enlightening and I got to see it in action during my trip. Also the recipes are easy to follow, look and taste delicious, and there is a variety of them.

The recipes are well written and very approachable - almost everything in this book is well within reasonable skill levels and ingredients. The assortment of recipes and technique discussion is excellent. Well worth the time reading it cover to cover.
