El título del libro no se condice con lo que uno encuentra. Da la impresión equivocada que es un libro para principiantes, pero no lo es. Es un muy buen libro para aquellas personas que trabajan en el área de la seguridad e higiene alimentaria. Me parece didáctico y actualizado en sus conceptos.
