When evaluating cookbooks, my standard for judging them is, "How many of the recipes in the volume do I want to try for myself?" In this cookbook there were only about three or four I wanted to try. One typical example is Pork Chops with Shallots. It says to brown pork chops in skillet four mintues per side, then bake in 400 degree oven until it reaches 145 degree temperature on an instant read thermometer. With the chops I would get at my local super market, I would end up with a relatively chewy pork chop. Many of the other recipes have ingredients I could not find locally. In the final analysis, this is not a cookbook I can honestly recommend to others.
