Easy Way to Bake a Chicken,

I think this is a great product for baking chicken without having to handle the raw poultry a lot and to assure a crisp skin and fully cooked interior.
This Vertical Roaster isn't tippy and fits nicely into virtually all my roasting pans, which I use to catch the drips. If you're careful, you can line the pan with foil to make clean up a breeze. I don't like beer can roasters because they are way unbalanced and the beer spills all over if you have to unstick the chicken - and you will - to remove it. If cooked chicken sticks to this one, it is easy to disengage the chicken without making a mess.

What a great invention! My roasted chicken comes out PERFECT every time! The meat is sooooooooo tender and juicy that a whole chicken practically falls off the bone! So I am now addicted to roasting chickens in the oven because it's so simple to do, quick (only several minutes of actual work time) and sooooooooo economical. One serving of chicken with a side dish cost me one to two dollars per person. You can't beat that!
I roast two birds at a time and save one for tomorrow's dinner :) You don't have to pre-marinade because the chicken comes out so tender when using this vertical roaster. Here's how I do it ... I coat the chickens inside and out with a strong mixture of lime juice, salt and oil. Roast at 450 degrees for 20 minutes, lower to 350 degrees and cook for 1 hour and 20 minutes more. You may have to adjust the latter time to your oven. Let rest for 20 minutes, then carve. At this point, you can pour your sauce of choice on top of the chicken pieces, move oven shelf up and broil on low for another 10 minutes or so. Yuuuuuuuuummy! You will get a completely different chicken this way. Happy roasting!

This unit is only okay.
Strengths are: 1) super easy to clean up. 2) Very stable for chicken up to 7 pounds (but you would want to stew Capons or Stewing Hens anyway). 3) Christopher Walken uses one, and he is so cool you can be too if you use one. Weaknesses: 1) If you use a low-fat, organic, free range chicken the meat will dry out before it is done (yep, weird I know). You need to add a lot of extra fat to control for the moisture loss. 2) Can't use stuffing. 3) Skin is crispy on top, but soggy on the hindquarters. 4) breasts can dry out before thighs and legs are done. 5) Wings can dry out and be useless before breasts, thighs, and legs are done. This is not a "simple" to use device, but takes careful monitoring and expert basting and careful temperature control. It is aimed at thee "low fat" roasting market but actually has a very narrow range of uses. Good for fryer/broiler size chickens, only so-so for roasters and useless for game hens.
