Book Description

2011
Finally, the secrets to delicious and healthy gluten-free and allergy-free cooking and baking are available in "Fresh from Elizabeth's Kitchen." Elizabeth shares her tried-and-true recipes and helpful hints to help make living gluten-free as easy as pie. Recipes focus on fresh, full-flavored and nutrient-dense foods. Diagnosed with celiac disease in 2002, Elizabeth understands the challenges that families and individuals face since not only does she eat gluten-free, so do her three children. The cookbook features family-friendly delicious dishes and menu ideas in every chapter. Elizabeth includes a recipe for gluten-free baking mix which enables home cooks to create a variety of scruptious baked goods like Blueberry Oat Pancakes, Lemon Tea Bread, and Peach Cobbler Muffins. Readers will be delighted with the easy and elegant dinner recipes in the Family Dinners chapter, such as Mojito Chicken with Cilantro Rice or Almond Encrusted Tilapia with Apricot-Orange Teriyaki Dipping Sauce. Then there is the Divine Desserts chapter - full of special treats that those on a gluten-free diet have been craving -- such as Key Lime Meringue Pie, Carrot Cake with Heavenly Cream Cheese Frosting, and Blueberry Cheesecake with a Gluten-free Graham Cracker Crust. Elizabeth's cooking and baking ingenuity is highly regarded in the gluten-free community. As the founder of The Pure Pantry, a lecturer and cooking instructor, Elizabeth alleviates the fear in those who are remodeling their diet to a gluten-free one. "Living gluten-free is not a sentence to bland and boring food. 'Fresh from Elizabeth's Kitchen' is a guide to help you navigate gluten-free cooking and baking so you won't miss out on the foods you love," says Kaplan.

This is a wonderful cookbook and I highly recommend it to anyone who has sensitivities to various food allergens. I do not tolerate gluten (Celiac disease) and have to also be careful with dairy (cow's milk). There is a great variety of recipes as well as suggestions for making your own gluten-free mixes. I should also tell you that the author markets her own line of gluten-free baking mixes and they are WONDERFUL! They are a little pricey but compare favorably with similar, gluten-free products. This cookbook should be a staple in any gluten-free (or other allergen) library, in my opinion.
