Whether you are an omnivore, vegetarian, vegan, or want to incorporate more veggies into your meals and less meat a few times a week simply for health benefits or weight loss, this cookbook is a winner in my book. I've had a few vegan cookbooks that I utilized just a few recipes out of and rarely could I find one that was a "go to" for entertaining with recipes that non-vegans wouldn't notice were vegan...this is such a cookbook. The tastes range from everyday to yummy gourmet. But the recipes are easy to follow with few ingredients.

Here are some examples:

Chili and cilantro corn fritters with tomato sauce (and this means chili as in red chili pepper not chili as in the cowboy beefy saucy chili, mind you.

I like the variety of recipes, which gives me confidence to try a vegetable from the farmer's market that I have not cooked before since I'm sure this book will tell me how. However, I believe the title is misleading. Though most veggies don't take long in the oven or pan, many of these recipes take quite a bit of effort to gather, process, and put together before the heat is applied. Remove the word "fast" from the name and you come out with a better title, "Fresh and Vegan".

There are no pictures in the book, so it is really hard for me to envision recipes from it and want to use the cookbook. If you have more of an imagination than I do, I'm sure it would be better.

This book has been useful especially for my college aged children who occasionally cook but,get stuck just coming up with something tasty. The recipes are pretty straightforward and the ingredients should already be in your pantry anyway! I have used this book as a suggested primer for newer vegans.

A brief introduction offers quick tips and tricks for properly stocking one's vegan larder and refrigerator, but nearly all of Fresh and Fast Vegan is devoted to presenting recipes ranging from "Vegetables in a Crispy Chickpea Batter" to "Grilled Eggplant with Black Olive Dressing", "Roasted Garlic and Walnut Linguine", "Moroccan Spiced Rice Pudding", and much more. Nutrition information (including calories, fat, and carbohydrates per serving), an index, and a short yet insightful sidebar of comments about each dish round out this practical cookbook, enthusiastically recommended for all busy meal providers (not just vegans)!
