I love canneles, lovely custardy interior with crusty exterior, and so have been on a quest to make them perfectly. In an attempt to limit the amount of cookware in my apartment, I have experimented with various cupcake molds, and the results are eminently edible, but not near perfect: the fluting IS necessary to get the additional surface area crust. The copper molds are crazy expensive, so I bought one each of the Freshware, World Cuisine (also labeled Prochef), and the DeBuyer Elastomoule molds to see which produced the best from a single batch of batter. The DeBuyer mold produces marginally better canneles from having slightly more pronounced flutings. The World Cuisine and Freshware produced identical canneles in the first batch, but I have my doubts about how well the World Cuisine one will stand up over time - the silicone is thinner, and after their first use some of the flutings have flattened or otherwise distorted. So my end ranking is 5 stars for DeBuyer, 4 stars for Freshware, and 3 stars for the World Cuisine ones.
(Side notes: (1) the recipe in Gale Gand's "just a bite" book makes exactly 20 canneles, so two DeBuyer plus one Freshware is the best combination for a single batch. And for a recipe that you have to start two days in advance, and where the end-product freezes well, its not worth doing smaller quantities. (2) Brushing the molds with a 50/50 mix of butter and beeswax before filling gives the best crust. Yes it is annoying to deal with beeswax, but it really does make all the difference. More difference I suspect than using copper instead of silicone.)

I bought this item unsure whether silicon would work to bake these highly specialised little cakes. Wow, it was a brilliant mold - just the right size. I took note of another review and buttered the mold before using it. The caneles came out brilliantly - crunchy on the outside, soft and custardy on the inside. Because the mold was buttered first, cleaning was no problem at all. In fact, I like this item so much that I'm going to order another one. Well done Freshware!

I have been using silicone molds for baking canneles for years, and although not the traditional metal molds, they are so much easier to use. The canneles pop out cleanly and easily. The pastries come out nicely browned as well. They are wonderful.

I bought the silicone mould after reading a recipe from Chocolate and Zucchini for canneles. The shipment was instantaneous,and the recipe was priceless. The pre-seasoning of the silicone was a good idea. I used peanut oil and also filled a few empty cups with hot water ,to prevent warpage as warned in the recipe. This is a great baking tool and gift for $10

It is like a gift when you get a product that you had reservations ordering and turns out excellent. I had my doubts but purchased it anyway. I do not like the thought of plastic with baking, I do not even own a Silpat. I previously purchased the Du Buyer which is 3X the cost and has to send it back since I did not think it was worth that. I have sent my Christmas wish to Santa for the Matfer Bourgeat copper ones but I doubt it if Santa's workshop has a culinary section. I baked the ever difficult Cannele Bourdelais in it twice, following a popular recipe by Clotilde.
The accompanying literature says do not use in temperature over 460 but I had to set my oven to 500 F the second time around, then lowered it to 475F for a duration of 15 minutes, then on to 45 minutes more for 400F.
Not only did it hold up in those 2 times of high heat baking but it also cleaned well with hot soapy water. Mind you, I used beeswax and butter to brush the mold before baking. I have read that some people who have used silicone molds with the beeswax/butter combo had to throw out their mold due to the difficulty in cleaning - but not this one. It is a keeper, and in fact I am ordering another one to have a pair of them when I make a bigger batch of batter. What a great bargain for a great perfoming mold.

I purchased this product on a whim. I have had several canneles receipes floating about my receipe books for a few months and I decided it was time I tried them. I found this one for a reasonable price, so I decided to go for it. It is the first silicone baking piece I have ever owned, so I was a bit apprehensive. The instructions that came with it were simple, but detailed enough for me to feel comfortable with baking with it as well as the pre-baking steps needed. I have used it many times since receiving it and it has worked like a dream. It is also convenient for washing as I can put it in the top rack of my dishwasher and forget about it. I would recommend this product.
