The best thing about this video, which highlights seafood dishes, is the way Jeff Smith, the Frugal Gourmet, gets squid ready for the pot. He carefully cleans one as the camera closes in so that anyone watching can easily become an expert. He then cooks the squid in a ginger-and-mustard sauce so tempting you can practically smell it as he tosses, shakes, and stirs.

Smith poaches salmon steaks, then prepares a simple herb sauce to liberally spoon over them; he sautés prawns in garlic and wine until they are curled and pink; he fries white fish to a golden turn; and he serves oysters in a "stolen sauce." Fish scares most cooks, but with his folksy, next-door-neighbor style, Smith does his best to break down the seafood barriers and entice even the most apprehensive cook into the kitchen. Smith suggests a wine to go with each dish, and bucking tradition, he focuses on red rather than white wines. --Susan Herrmann Loomis
