I use Fruit Juice Processing Technology as a reference at work (food broker) and it's very educational.

A lot of it is over my head, as it is obviously meant for readers who are in the actual processing/manufacturing end of the business, but I find if I read slowly and carefully and try to recall as much as I can from High School chemistry and biology, I can understand what's being said. I can only say that it seems to be thorough and reliable. Unfortunately I can't comment on the technical aspects.

I use this book mostly for authoritative definitions/descriptions of industry terminology (brix, essence/aroma,...) and also to understand the different processes and equipment (presses, filtration methods) used to make juice concentrates.

A brix chart (sugar density table) is included in an appendix, which I use quite a bit to calculate and convert weights/volumes and dilution ratios.

We are the company is located in Gyunggi-do, Korea, exporting construction machinery, fruit juice, fruit juice makers and automatic juice packers.(small size, for domestic use and for general business stores)
