Elia's book promises to get you “to create like a chef,” but I kind of doubt I'd have come up with dill and cinnamon on my own. I learned it here, the way cooks have been learning from recipes since the very first volumes. In my opinion, this book is not quite as billed. The impression one gets is that the author will treat the theme of flavors in some depth, both philosophically and technically. That's not really the case, however, for after a handful of pages which treat that topic in very general terms, we get just a series of recipes. Now those recipes are explained exceptionally well -- no one should have any trouble following them at all, but in the end there's no really practical or deep rumination on flavor and how to create like a chef. Still, as I said, it's a very nice collection of dishes to try. Physically, the book comes with stiff, thick cardboard covers with a tape spine and no dust jacket. It lays reasonably flat, but I can see a copy in use getting rather beaten up, perhaps a not uncommon fate for any book of recipes. In any case, I'd probably give it 3.5 stars if I could, but I'm going to bump that up to 4. Some good stuff here.
