I bought this book in anticipation of taking my first college course (after graduating high school 17 years ago!). I have been reading it before the class starts because it is a very fascinating and comprehensive guide with (fairly) easy-to-understand explanations of the scientific breakdown of all of our favorite foods. Even if the class is cancelled, I will still keep this as a great compliment to my cookbooks!

The first chapter is written for kindergarteners. Aside from being verbose & borderline condescending, the unsolicited editorializing was distracting if not inappropriate: "Some people with dietary restriction, DUE TO PROBLEMS SUCH AS HIGH BLOOD PRESSURE..." why not leave it at dietary restrictions? or say dietary restrictions, such as requiring low-sodium foods because of high blood pressure. Writers & editors should know better. This is one of many bombs throughout the text. It would be fine if this was not a text book, but it is.

"Restaurants are the venue here many people have meals." Really??? While this methodical breakdown of common sense is actually helpful for technical chemical compound breakdowns, which the author does, but unfortunately some of the technical info is incorrect.

Overall, I think this is a great book for those in high school or maybe college, who is interested in possibly going to chef school or becoming a nutritionist. For adults, it's an interesting general read to better understand food safety, but don't pay the full price - buy it used.

Great book, very interesting and I learned a great amount of detail about food preparation and was easy to understand. I was very satisfied with it. It is the older edition but was the text I was required to read for a particular exam, and I passed the exam!
