In the interest of full disclosure and for you purists out there, I'm letting you know that this is a duplicate review. I have put this same review on the six pack version of these noodles. It is, after all, the same product, just a different quantity purchase so reviewing it in both places seemed reasonable enough to me....

Those of you who know me know that I don't eat pasta or carbs and am forever on a quest to find noodle substitutes that don't feel like a compromise. A couple of years ago I bought and reviewed a turning slicer, the World Cuisine A4982799 Tri-Blade Plastic Spiral Vegetable Slicer which I still love and use frequently to turn assorted vegetables into great noodle alternatives. Recently someone mentioned these kelp noodles and I decided to give them a try. Oh my, these are phenomenal in every way. Don't like to cook? Don't worry, these noodles don't require cooking. You CAN cook them, but you don't have to. It has only been a couple of weeks since I've found them so I haven't tried a large assortment of recipes but everything I have tried so far has been fabulous. Cold noodles with sesame sauce was a hit with everyone. These noodles are slightly chewy like pasta but they are also kind of crunchy like bean sprouts. They are thin like regular spaghetti and crystal clear like cellophane noodles. In and of themselves they have a delicate and refreshing taste with no weird smell like some of those other noodle alternatives. They are a wonderful size and texture and they hold thick sauces really well. Everyone who has tasted the cold noodles with sesame sauce has moaned with delight and licked their plate clean.

i just received the order in mail and it had an awful strong bitter taste, it also tasted like bleach or some other chemical, when i tried it, i felt like i was chewing on a piece of plastic. i don't know if it was just old or something went wrong when they made it, but i've had kelp/seaweed before and it's not supposed to have the strong bitter taste like it did...it was not at all edible, i threw it in trash because i was concerned that it might get me sick...also note that the noodles are much thinner in diameter not as think as shown on the bag picture, and it's also deceptive as far as the contents - there is nothing in the bag except for the clear thin tangled noodles.

Do these have the taste and texture of wheat-based noodles? No, of course not, they're made with different ingredients. They have the taste and texture of water chestnuts. After marinating in a sauce, the noodles soften somewhat, but don't expect them to have the same soft bite of whole wheat noodles. They have a light crispness to them.

I really enjoy these kelp noodles in Asian peanut sauce or pesto. Think of it as an alternative to salad - something light and raw for a summer day. They're low in calories, and leave you feeling full without being heavy. I was worried that they might have an ocean-y flavor about them since they're made from seaweed, but they don't have any flavor at all. Rinse them before using to get rid of any excess saltiness.

My only complaint is that the price of the noodles have gone up significantly since I first started buying them. I used to be able to buy them in bulk from Amazon for a significantly lower price.

Thoughts:

* These never really got soft like a noodle, more like a very al dente noodle, which I like - so I didn't care!
* They didn't taste fishy to me at all. Barely any taste.
* Something fun to try!
* I did read about how eating a lot of kelp might not be so good for you though, so I had that in the back of my mind.
* Beware they had an interesting texture - not like a noodle. Don't be expecting pasta and experiment!
* Not sure if they were worth the price to get them regularly.

These noodles are awesome. I am on a very restricted diet and love these noodles, because they are so versatile and easy to use. The only thing that bugged me was that the shipping was more than I paid for the noodles, which is ridiculous.

The noodles were great. Don't eat them expecting them to taste like "real" noodles or even rice noodles. They are crunchy and a little watery. But I thought they were great with marinara.
However, I highly recommend you ignore the "cheesey sauce" recipe on the back. It was scarey. It probably tastes good if you have been a raw foodist for years, but for someone on a whole foods diet who still remembers "real" pasta, I don't recommend the recipe!
I do recommend the noodles, especially for someone looking for a rice noodle alternative with less carbs.

Very unpleasant rubbery noodles. I even slathered them with home made pad Thai sauce and could not choke them down. I couldn 't even entice my teenaged sons or my macrobiotic loving husband to eat these after the had a quick sample. I' ll sick with making my own noodles out of zucchini using a thin slicer.
