Got these at the same time I bought the grill. With the additional amazon $25 discount for spending $125, it seemed like a good idea.
However, after making omelets in both the Omelet Plates, and the Baking Plates, I prefer the latter. I like my omelet folded, with the cheese and other fixings in the middle. With the Omelet Plates, you place the eggs and other fixings in the oval indentations. While cooking, it puffs up considerably. You then sprinkle cheese on top after it is done. It tastes fine. I would wait until you have used the basic plates before you decide you need the Omelet Plates.

I ordered these plates last week and got them last night. They work very well, easy to make omelets and quick. One helpful piece of advise: Have all of your ingredients ready to place in the indents of the tray as the omelets cook very fast. Also, use a non fat cooking spray like Pam, after cooking your omelets will slide right out of the tray that way and make cleanup a snap! I am glad I bought these. The picture shows one tray, there actually 2 trays, the bottom tray is the deep tray where the eggs and other ingredients go, there is also a upper tray with shallower indents.

The omelet maker is extremely versatile, Besides omelets (small) you can get pre-made dough ( puff pastry or pie crust) at your local supermarket and then go wild making pocket sandwiches with left-overs
hint add sugar to fresh fruit (or splenda) do not use Nutra sweet or saccharine as they change flavor under heat leftover meat can be chopped and the grandkids will eat leftover hamburger in a pocket pie with other veggies even tho they won't eat it when first served - put crust on top and bottom and temp on medium or crust will get done with middle still cool great item
