I own many Gerber knives and all are top notch quality but this particular "fillet" knife is literally the workhorse of my kitchen. I slice meats paper thin. I can cut right through bone. It goes through raw potatoes like butter. The sharpener that is built into the sheath works well enough to put a new blade on the knife if it ever gets dull but I like a good blade on my knives so I use an old school sharpening stone on most of my good knives.

I buy boneless skinless chicken breast in bulk and freeze the cutlets but before freezing, I spend an hour cleaning them up real nice, removing any fat or junk left over from the butcher. To make my work easier, I put this knife through the sharpener a few times and start trimming. It makes the work so much easier compared to my other "regular" knives. It goes through chicken like nothing is there.

To use this knife for "just fishing" is a waste in my opinion. Most old junk knives will fillet a fish. I do own 7 of these knives now and I do keep one in my tackle box but I don't want to ruin it so I usually use my cheapie fillet knife while out at the beach or dock to do the dirty work. At home on a cutting board it makes very easy work out of filleting fish. I do use one of my older knives to cut up frozen squid for bait. The knife cuts right through the block of frozen squid like its nothing.

The knife has just enough flex to it to make it useful for many items but is rigid enough not to slip or break when cutting. The handle is a very grippy type of rubber. It's got a real nice feel in the hand and it will not slip.

As I said, I own 7 of these knives so I guess you can say I love them. I also bought one for my ex-wife as well as my parents and they too love the knife.

I purchased this to help fillet my saltwater fish that I am catching locally.
The pros:
- The blade bends just enough to take the skin off the meat.
- Great grip on the handle.
- Comes with a carrying case and sharpening tool at the bottom
- Small enough to put in the tackle bag but big enough to get the job done.

The cons:
- Arrived a little dull and needed sharpening.
- Some of my other knives hold an edge better.

Over all its been a great knife to start the fillet process on the fish I catch.
I am an inshore saltwater fisherman and normally catch red, spec trout and mangrove snapper.

Mine came decently sharp, and a minute or two in one of those cheap pocket sharpeners/the sheath sharpener made it pretty sharp. Good handle, held its edge decent while working on a deer. Good knife.

Star knocked off for the sheath. It's not that great. It doesn't even go on a belt well, my belt (not super thick...pretty normal really) could not get through the kydex "loop", so it can't go on my belt. I'm gonna have to make a leather one or something.

But overall it's a decent knife for cheap.

Everyone in my family has one of these knives... even though none of us fish. It is an excellent knife for peeling and slicing fruits and vegetables (even tomatoes). The blade stays wonderfully sharp with a little help from the sharpener on the plastic sheath. I would recommend this as an all-purpose kitchen knife to anyone and have recently given it as a gift to several people.

You can not get much better for the price. The knife is extremely sharp and is made by a trusted name brand. It does come with a plastic sheath and the ceramic sharpener is attached as part of the sheath where the tip of the blade would be.

This knife really holds its edge well. I use it on walleyes, and it is the perfect size. The handle provides great grip even when slimy or wet. My only complaint would be that the sheath seems a little over sized for the knife.
