Ghirardelli BuildingIn 1849, when Domingo Ghirardelli immigrated to the United States from his homeland of Italy, he had dreams of striking it rich in the California Gold Rush. He settled on opening a tent-store in Stockton, CA, selling various supplies and confections to fellow miners. With his new business proving successful, Domingo decided to open a store and hotel in San Francisco. After a major fire in 1851 destroyed his businesses, he began to rebuild. In 1852, he formed a new confectionery company that would soon become the Ghirardelli Chocolate Company.

I've always loved dark chocolate, so when I saw this I had to try it. It took a little getting used to-I don't cook with it, I just eat it, but once I got used to it, it was the most intense chocolate I had ever had. Dark chocolate is in the news these days-it has a lot of antioxidants and fiber and other compounds that are very beneficial. Chocolate is a plant food-it's just one that gets loaded up with sugar and milk and fat, so the health benefits are only to be found in the really dark stuff, like more than 70% cocoa. And what health benefits-preliminary studies are showing that dark chocolate can lower cholesterol and blood pressure and even increase insulin sensitivity, which can benefit diabetes and help a person lose weight. I was eating a little of this chocolate every day for my daily fix-it only has 70 calories a square, but now that it's not just an indulgence I get to feel good about eating it. And if you don't want to eat it, it's really good for baking-it's very smooth and melts and blends easily into whatever you're preparing.

I used to use Bakers unsweetened chocolate for baking but started using Ghiradelli and love it. My twin grandsons (5 yrs) love brownies so I generally make them when they come over for dinner on Tuesday evenings. I ran out of Ghiradelli and could only get Bakers. They asked why my brownies didn't taste like fudge and didn't want to eat the ones made with Bakers.

This chocolate contains NO sugar. It is 100% cacao.

"A 2011 Swedish study found that women who ate more than 45 grams of chocolate a week had a 20 percent lower risk of stroke than women who treated themselves to fewer than 9 grams of the sweet stuff.

Regular chocolate eaters welcome a host of benefits for their hearts, including lower blood pressure, lower "bad" LDL cholesterol and a lower risk of heart disease.

Because it's rich in fiber, dark chocolate can actually help keep you full, so you'll eat less, Dr. David Katz, founding director of Yale University's Prevention Research Center and HuffPost blogger told The Huffington Post. Regular chocolate eaters might do themselves a favor by treating themselves to a bite instead of snacking on "11 other things first" he said.

A small Italian study from 2005 found that regularly eating chocolate increases insulin sensitivity, thereby reducing risk for diabetes.

Cocoa has anti-clotting, blood-thinning properties that work in a similar way to aspirin, Dr. Fitzgerald writes, which can improve blood flow and circulation.

Because of chocolate's ability to improve blood flow, in particular to the brain, researchers at the University of Reading hypothesized in a small 2011 study that chocolate may also increase blood flow to the retina, thereby giving vision a boost.

That boost of blood flow to the brain created by cocoa's flavanols seems to make people feel more awake and alert, and, in a small British study."

For two years, I've eaten no sweeteners of any kind. I've tried many different kinds of 100% cacao or 99%, with the remainder being vanilla, as in the case of Scharffenberger. They are never cheap. The biggest drawback generally is bitterness or a rough texture. You can ease the bitterness somewhat by adding creamy fats, such as coconut butter or heavy whipping cream, but the lack of sweetener is always noticeable -- even to me, after I've lost the taste for sweetness.

For the price, this is by far the best pure chocolate I've tried. It's smooth and glossy, breaks apart with a pleasing *snap*, and has much less bitterness. My baked goods and mousse-type desserts have been much smoother; they are rich without being harsh. If this is the case with zero sweetening, then I suspect that this chocolate will be a big winner for all other baking.
