Could be called the "Encyclopedia of Tofu",

I was quite surprised by the sheer size of this book. It is quite large and contains over 250 pages, most of which are recipes. There is a brief introduction to various types of tofu and methods that affect texture, flavor, etc. There are also several pages on the variety of soy products currently available on the market and how to use them. As with most cookbooks, recipes are divided into tofu basics, breakfasts, appetizers, soups, salads, lunch and dinner, dressings, sauces and spreads, desserts, and a metric conversions chart, if you're interested. There is no lack of diversity in flavors here. There are plenty of "normal" recipes and creative variations thereof, as well as Indian, Mexcian, Thai, Chinese, Japanese, Italian, and a few others. Some are highly seasoned, others are very basic. Unlike some books I've seen, these don't look like 200 variations on the same recipe. There are color photographs every couple of pages and literally hundreds of recipes. Some emphasize tofu very strongly as a main ingredient and other incorporate it as one in many. There are definitely recipes here for those who LOVE the taste and texture of tofu, and plenty for those who want it in their diets but would prefer to not know it's there. ALL of these recipes are vegetarian, and many are vegan. There is no fish, or meat broths of any kind. Still, some are very quick recipes and some more complicated. The recipes are typed in a medium-sized print which is easy to read, and the steps are separated by spaces and numbered, making directions easier to follow. Quite a number of these recipes are also low in fat. There is definitely something here for everyone. I think it's an impressive and noteworthy collection in which many people would be satisfied. It is more than worth the price.

The best tofu cook book I own.,

I got this book as a gift last Christmas and I have made about ten or so of the recipies and they all came out wonderfully. Just about all of the dishes are very simple to make and don't have a lot of complicated ingredients. There is a short bit at the front which teaches you about tofu and how to work with it. This book has dishes for every taste including Mexican, Indian, Middle Eastern and Italian. It has an incredible breakfast food section and a fabulous dessert section as well. If you love the taste and texture of tofu or if you want to start eating tofu but don't want it to be the main focus of the dish this book has everything. I can't rave about this book enough. The authors obviously did a lot of research to compile such a fine collection or recipies and I can honestly say it is the best tofu book in my collection.

This book has easy recipes and an overview of the different textures of tofu that are available. A great book for the beginner with some delicious and easy recipes.

At Last- A Tofu Cookbook with Lots of Color Photos!,

With a name like "tofu", this ingredient needs all the help it can get. This help comes in the form of beautiful color pictures for many of the recipes in this new book. Those of us who want to increase our intake of this wonder food also eat with our eyes and the photos in this book encourage us to try the recipes. There is one for Tofu Benedict that looks more appetizing than the original version that uses eggs. It is a great addition to my vegetarian cookbook library.

I can see why people like this book because it has a huge variety of recipes. However, I really wanted a tofu cookbook that would teach me how to SUBSTITUTE tofu in my cooking. 'The Giant Book of Tofu Cooking' gives recipes in which tofu has been ADDED. For example, the "tofu cheesecake" still has a fair amount of cream cheese in the recipe. Rest assured that all of the recipes are vegetarian, and one COULD just substitute soy products for the dairy, but for me, that defeats the purpose of buying this book. I also bought 'Tofu Cookery' by Louise Hagler, which some of the same recipes (although fewer than 'The Giant Book...') without all the eggs and dairy.

This is the best tofu book I have ever found. And the biggest! The recipes are very easy to follow with ingredients that are easy to find and have on hand. It has nice pictures too which I like in my cookbooks. It has tips on how to work with the tofu for those who have never cooked with tofu before and for those who have.
I cannot say how much I enjoy this book. I always recommend it to everyone.

I do not recommend this cookbook at all. It has a lot of colorful photos and an appealing layout, but like another reviewer stated, there is no nutritional information. Another problem with this cookbook is that the authors stole many of their recipes from another far superior book, "Tofu Cookery" by Louise Hagler, which was published years earlier. Here are some recipes that were directly lifted from another person's work: Chinese Sweet and Sour Balls, Zucchini Frittata, Russian Dressing, To-Foo Yung, Tofu "Crab"cakes, Tofu Falafels, Frozen Peanut Butter Pie, and Chocolate-Almond Pie just to name a few! There are so many more that they copied, and I almost wonder if that is why there is no nutritional information for any recipes. They didn't even bother to test the recipes, but instead spent their time and money on an impressive layout all the while copying someone else's work. I realize there are many cookbooks published and not all recipes can be original, but this one in particular is bothersome since it appears the authors were lazy and dishonest. One recipe after another is identical to recipes included in a book published almost 20 years earlier.

Great cook book for Tofu users. I love the pictures & simple instructions. I thought it would be Vegan based. I just subsitute the eggs,cheese,& milk with Soy milk, Soy Cheese and egg replacer.

This is a wonderful cookbook for anyone who wants to learn to cook with Tofu. I used to only use Tofu once in a while, now since finding this book, first at my local Library, then I bought it through Amazon.com, I cook with Tofu a few times a week. This book teaches you the Basics of Tofu and has alot of recipes from Breakfasts to Desserts. I have tried the Pumpkin Pancakes, Lasagna, and a Dill Rotini, Yum. I want to try all the recipes in this book at least once. This book even has recipes for sauces, spreds and desserts, such as "Alfredo", "Mayonaise" and "Icecream". I highly recommend this book as long as you don't have any allergies to Soy. It also tells you how to buy and store different types of Tofu. Enjoy!!! I am.

Tofu Is Not Just for Vegetarians!,

The wonderful recipes in this cookbook would stand alone to please a cook who is looking for healthy and delicious meals.
But what I love about it most is the amount of recipes that are dairy free. Anyone who needs to cut down or eliminate dairy from their diets (for health and allergy reasons) will find it a GREAT resource. I admit, the first recipe I tried was the ice cream. I was pleasantly suprized how deliciuos it was. Especially the chocolate version! To think of being able to ENJOY ice cream (in any creative flavors I choose) without the consequences is a dream! The dairy free recipes and meals in this cookbook have brought back the joy of cooking again! Thank Heavens for this cookbook!! |
