High tech from tip to handle, Global knives from Japan created a sensation when they burst onto the world's culinary stage as an alternative to traditional European-style cutlery. Blades are made of hard molybdenum/vanadium stainless steel and "face-ground" with a long taper rather than a short bevel so edges remain sharp longer than even the best high-carbon stainless-steel knives. Edges also are ground at a more acute angle than traditional European-style knives and arrive from the factory razor-sharp. Although Global's original knives have thinner blades and are lighter than traditional European-style knives, Global also makes a heavier-weight line for cooks who prefer hefty cutlery--like this 8-inch vegetable knife, whose broad blade is as thick as a traditional European knife's and is ideal for precisely slicing and chopping vegetables. Global also dispensed with bolsters on most of its knives, including this one. Most Global knives have hollow handles, but the handle on this knife is solid. Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a Sharpening Guide Rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. I was given this knife as a birthday gift six months ago. It is absolutely wonderful! Perfectly balanced, sharp, and nice to look at. The fact that it is so well balanced makes it extremely easy to use. Slicing watermelon or cutting sweet potatoes requires hardly any effort any more! All I have to do is let the knife do the work. Chopping vegetables for a tomato sauce is a cinch with this knife. I have a large family and it is not unusual that I have to prepare dinner for 12 to 15 people and this knife has made it easy for me. I intend to get a full set of these knives eventually. In my opinion, there is no comparison to my Sabatier chef's knife.

The first time I used this knife, I knew from that second that this would be one of the most treasured items in my kitchen. I LOVE it. I have Henckels & Wusthof knives, but this knife is by far the best. When I prepare a meal, my favorite part is when I get to use my knife. I cannot possibly express to you how truly wonderful this knife really is. Buy it! Buy it! BUY IT! You won't be sorry (except when you aren't paying attention and cut yourself)! I only wish I had the money to purchase a whole set; I will one day...

Update: I also purchased the "Global 10-Inch Diamond Sharpening Steel" and WOW - it's amazing. If your knife is a little on the dull side, run it over the sharpener a few times, and BAM! It's as sharp as it was when you bought it. Simply amazing.

This knife is quite a bit lighter than you would expect anything with the word "heavyweight" in its name to be, but it's plenty strong, quite sizable and feels good in the hand. I still think a cheap, heavy cleaver is the ideal tool for melons, squash and sweet potatoes, but this is definitely an excellent chopper that will make short work of any conventional fruit or vegetable. It takes an edge suitable for paper thin slices as well, but it's not hollow ground or fluted, so they'll cling like crazy. I can imagine its relative straightness would make it an ideal candidate for performing that fancy daikon unrolling trick in the hands of someone much more skilled than I, however.

It's also worth mentioning that this knife will easily travel through over half of a large onion with little more than a flick of the wrist, so keep those fingers tucked under, and invest in some safety-toed boots.
