Stainless-steel handles are Global's most striking feature. They're molded to fit the hand and dimpled to resist slipping. Smaller around than many European-style handles, they're easy for small-handed cooks to grasp and seamless for sanitation. Global recommends using a ceramic sharpener or a diamond steel instead of a metal sharpening steel for its knives, supplemented by a synthetic whetstone, a ceramic whetstone, or a Shinkansen sharpener. Global also makes a sharpening guide rail so blades can be honed on a whetstone at the proper angle. Global knives should be hand washed to protect edges. Having been a Sabatier fan all my life, I was a little skeptical when I saw some of my chefs using these Japanese knives, but having handled them I decided to try one at home. I love this knife. It is beautifully balanced and takes an edge easily. I use it all the time and will get around to getting some larger ones when I can afford them! Right now, this is my all purpose knife for all veg prep and sundry general slicing and paring. It is no good for chopping, though they make plenty that are. Highly recommended.

Global quality but some problems,

I bought this on a whim to finish my global collection.Quality is the same as all global knives but I agree with previous reviewer that the handle is too flat which make it awkward to use.
If the handle had more heft it would have been a great paring knife. Global skimped on this knife

Top quality steel,right length & heft.The problem is with the handle wich is way too slender. When working with wet hands is downright dangerous.Practically you have to hold the knife with your fingertips(& I have small hands),even so the handle corrugation is not suffficient to give a firm hold.
