Global heavy weight 11-inch chef's knife This heavy weight Global knife has more heft and a thicker blade than the knives in our classic G series. This is an excellent all-purpose knife for those that prefer a longer blade. Loved by professional chefs around the world, Global knives are an excellent choice for the serious home cook. The thin and razor sharp Global blade allows the cook to cleanly slice through foods, preserving the integrity of the ingredient and maximizing its flavor. The majority of Global knives are ground to a straight point rather than the western style of beveling the edge. To balance their knives Global uses a hollow handle that is filled with just the right amount of sand to create the correct balance. The handle has its own unique darkened dimples for a non-slip grip. Global knives have a smooth contour and seamless, all stainless construction that eliminates food and dirt traps. Global knifes are forged in Japan from CROMOVA 18 Stainless Steel, a blend of 18-percent chromium for good stain resistance plus molybdenum and vanadium which gives excellent edge retention.

This knife is big but it is so well balanced that you do not notice when working with it. It is very sharp and the weight/sharpness and length all work together; found that it easily helps chop onion (length allow you to keep tip on the board the whole time) as easily as slice tomato thin, the length made it a snap to chop herbs quickly. This is a top three favorite tool in the kitchen - it also seems that the size make others avoid using it, so finally I have a knife all to myself.

Bought this knife for our daughter who cooks a lot and is particular about her kitchen equipment. She loves the knife - high quality and very easy with which to work. This is a large knife, perhaps better to get a 9" or 10" for more versatile use, especially if making a first time purchase.
