One of three Global whetstones of different grit ratings, this orange one is Grit 1000 for honing dull knife edges before they're finished on a fine-grit whetstone. It's made of hardened ceramic powder for quick, easy work and can be used immediately after wetting—-there's no need for a lengthy submersion in water. Attached to the whetstone is a porcelain slab for rigidity. The whetstone rests in a removable, rubber-like plastic base to prevent slippage while it's being used. It measures 8-1/4 inches long, 2-3/4 inches wide, and 7-/8 inch thick. Instructions and diagrams for proper honing accompany the whetstone. --Fred Brack

Product Description

This sharpening stone works by removing the first level of molecules from the blade of your knife, exposing a new edge. It is made from dense ceramic, which is harder than other stones and will show less wear. You won't see any dips or valleys develop in this stone, as they do in softer stones. It provides ample area on which to draw an edge down and across. (Grit is medium 1000.).

My only wish would be to have it be a little longer. The ceramic material is harder than traditional stones, which gives it a different feel, but is just as effective, and won't warp the way whetstones do after multiple uses. Great tool for keeping razor sharp knives.

I guess I'm a traditionalist since I don't use machines to sharpen my knives--this isn't just great for Global knives--it works well on all types of knives. My boyfriend makes sure to keep the surface even so we won't have to buy another one from creating dips (common mistake for many novice stone users). It's worth the price I paid.

A friend of mine is a professional sushi chef from Japan, who sharpens his knives daily, using the traditional whetstone method. I learned how to sharpen by watching him ... but since I don't cook professionally, and because my knives are made with a harder alloy, I don't need to do it nearly as often as he does.

Anyway, I bought my Global stone several years ago, shortly after they first started to become available here in the USA, and I really love it. The Global stone offers a large flat surface, enabling a good long and even sharpening stroke, regardless of whether you prefer a flush back & forth draw, or a crescent stroke. The porcelain spine gives the stone good rigidity, and the rubber no-slip base helps it to hold firm to the counter. Overall, it's a great stone ... all you need is a sturdy counter, a plant mister filled with water, and a rag (to absorb the resulting steel-tinted water) and you're ready to sharpen.

Minor nits: I wish the no-slip base had a bit more surface area, rather than being hollow, because in order to put a decent amount of force into the blade, I find I need to place a damp bar towel between it and the counter, to prevent it from sliding. In other words, the no-slip pad is good, but not as spectacular as the stone it supports.

BOTTOM LINE: High recommended. However, please note that the medium stone is meant to be used in conjunction with the Global Fine Grit stone (which is used to finish the edge produced by the medium grit stone).
