Product Description

Truly unique, Global knives are the choice for chefs around the world. This set includes two items every cook needs: a reliable santoku and a user-friendly sharpener. Ideal for slicing fish, cutting meat and chopping vegetables, the sleek, seamless Global santoku is constructed from a single piece of CROMOVA stainless steel to eliminate food traps and give you unmatched agility. Best thing is, you can easily return it to its original sharpness with the best-selling Global Minosharp-celebrated as one of the most effective and easy-to-use handheld sharpeners available. Material: CROMOVA 18 stainless steel. Care: Hand wash knife and dry immediately, rinse and drip dry sharpener. Dimensions: 7" blade, 11¾" total knife length, sharpener is 9" x 2" x 2½". Warranty: Limited lifetime warranty. Made in Japan. FEATURES:Santoku is lightweight to reduce hand fatigue. Perfectly balanced for more control. Ergonomic, molded handle. Global's signature dimple pattern provides a stronger grip. Edge is ground straight to a point, rather than beveled, for exceptional sharpness and edge-retention. Hollow handle is filled just enough to achieve the perfect weight. Easy-to-use hand-held sharpener. Water reservoir and ceramic wheels ensure correct angle. Two color-coded sharpening wheels. Designed for Global knives, but sharpens most others, too. No batteries or electricity required. Note: Not for use with serrated knives or knives sharpened on only one side. For these knives, use a waterstone or ceramic stone.

While some may not like the full metal handle's grip, it fit my hand perfectly. I tried many other knives, Shun, Zwilling, Wustholf, before deciding on this Global chef's knife and sharpener. The global knife was much lighter (and conveniently a bit cheaper) than all of the other knives, it almost felt like a large paring knife in my hand. While the heft of a German knife might be useful for slicing through thick meat, I found that the blade on my Global is so sharp that a simple slicing motion can cut through anything I need. The only downside is that this knife is not meant for cutting through bones, and should not be used for them because it may damage the blade. This is easily remedied with a cheap butcher's knife, however, and I find that the ease with which the knife cuts through everything else makes it well worth the trade-off. Also of benefit is that there is no bolster, meaning you can sharpen the entire blade without forcing a curve on the knife which would make it unusable after several years.

I was skeptical if the water sharpener would be of any use, as it seemed like a small freebie thrown in with the knife, but I've used it on this knife and my J.A. Henckel paring knives with fantastic results. My paring knives were so sharp after using the sharpener I cut my fingers a few times washing them because I was used to their duller blades. The sharpener is super easy and even fun to use, it's far more than just a small freebie.

All in all I strongly recommend this knife. It fits my hand perfectly, but it might not fit yours, I recommend trying out several knives before purchasing, possibly stop by a store like Sur La Table where you can slice and dice some food with different knives before picking one.

I LOVE this knife! I find myself saying that every time I use it. I'm an amateur chef without any formal training. I've always enjoyed cooking, but at 43 yrs old I never understood the value of a good knife in the kitchen. For years, I suffered with a set of awful, inferior, dull knives purchased through an infomercial. This knife is sharper than any I've ever used. It's light weight really does reduce hand fatigue. My hands would always ache whenever I would finish carving a roast with a lesser knife. This knife slices through meat, fruits, and veggies like butter! I really like that it's made from a single piece of steel therefore the handle won't separate over time. The fact that it comes with a sharpener for $100 makes it an amazing value. Did I mention, I LOVE this knife?
