I have made many of the bread recipes in this little, amazing book. They turn out super moist, unlike most gluten-free breads. The pumpernickle is outstanding - the closest thing to real bread since I've become gluten-free. The recipes are easy to follow. One suggestion, however: make sure that the dough is mixing well and if it isn't, give it a stir in the bread machine...

Many of the recipes in this book use dairy ingredients, so if you are looking for a gluten-free and dairy-free book (for a GFCF diet, for example), this is not a good choice. Some also use soy flour, another common allergen.

Note that this book is from the United Kingdom, but the author does include American equivalent measurements and terms.

I have made many of the bread recipes in this little, amazing book. They turn out super moist, unlike most gluten-free breads. The pumpernickle is outstanding - the closest thing to real bread since I've become gluten-free. The recipes are easy to follow. One suggestion, however: make sure that the dough is mixing well and if it isn't, give it a stir in the bread machine. Some of the recipes work better than others during the kneading stage. If you're patient and willing to experiment a little, it's worth it. You'll have the best bread you've had in ages!
