When I was told I could never again eat wheat, it was nothing short of devastating. I'd spent a lifetime refining my baking skills, starting a dessert catering business, and writing, thinking, and talking about glorious wheat filled goodies. Not to mention eating them! I even planned my vacations around them—the 10 Best Pastries in Paris, In Search of the Original Maids of Honour Cakes in England … you see what I mean.

I know how painful it can be to give up eating those delicious treats, but also the thought of not baking again was truly depressing. Many of the gluten-free baked products available fell far short of the homemade goodness I craved. They were filled with very unhealthy alternatives that, frankly, seemed just as bad as the wheat. Carageenan, xanthan gum, rice flour, potato starch—they didn’t sound very wholesome. And they were certainly not delicious.
Moreover, for many people, myself included, gluten-free also meant dairy-free, at least for a while. Some GFs can handle dairy in moderate amounts, but many—maybe most--cannot. Emerging evidence also suggests a stronger than suspected cross-reaction between wheat and dairy. It is probably best to limit, or avoid dairy while on a GF diet. With that, however, there went another entire category of dessert! Mousses, custards, ice creams…all on the No Fly List.

The price was right but I didn't make any of the recipes. They must have been forgettable. I should learn after ordering a few "free" ebooks.

This is a gluten free cookbook, not a low carb cookbook. All the recipes are very high in carbohydrates. The recipes look good, and would fit well in a celiac diet, but they are certainly not part of a Low Carb diet.
