Let me start by stating that I am a scratch baker who despises mixes of any kind. Let me further state that the medical necessity of having to go gluten free has caused me to reassess my derision for baking mixes. There are some wonderful gluten free flour blends out there that have enabled me to recreate some of my favorite "pre-gf" recipes, but a decent, non-crumbling pie crust completely eluded me. Until now!! This crust made my holiday season a smash hit. Starting with the apple pie I made for Thanksgiving as an experimental first-go, and continuing with more pies than I could eat through Christmas and New Years', the holiday season this year turned into a celebration of one year of gluten free living. And it's all thanks to this neat little mix in the cool, re-sealable bag. The crust held together perfectly, while maintaining a lovely flakiness in each bite. Even the bottom crust was tender yet flaky (I used shortening and butter from my old fashioned recipe, and using ice water helps with the flake). Even my non-gluten free (and pie connoisseur) boyfriend ate my gf pies with gusto, and said that this was the first gluten-free baked good he actually really loved. Ahhh - the sweet taste of success! Purchasing it by the case through Amazon is perfect for me, and as the springtime gets closer, I dream of the black-cap, raspberry, strawberry-rhubarb, peach, cherry and blueberry pies that will fill my stomach (and, I fear, expand my hips). THANK YOU, Mama - you've given me a whole new lease on life....gluten free life, that is!

I will admit I had better success when I made a pie crust from Gluten Free Mama's recipe book that was nice and buttery than from my first attempt with her mix.

Following the directions for the mix will be a bit lacking. This can be remedied one of two ways with different results. Adding an extra egg will create a very tough crust tho unoffensive in taste. Or you can add a whole stick of butter which will make it a bit flakier and of course butter makes everything taste great.

Was surprised to find I had to add so many other things to a mix. Once mixed it was a globby mess. Rolling it out between sheets of plastic wrap was OK but my wrap wasn't as big as the pie circumference. Couldn't gauge the evenness of the crust because if if lifted it up at all, it fell apart. Managed to get it in pie pan, and patched ok. The crust on the rim was beautifully browned and has a texture somewhere between a Graham cracker crust and traditional pastry. Neither exciting nor disappointing. The bottom crust was almost soggy. I think it was just too thick to cook all the way through. I won't purchase this brand again.
