Ingredients
Brown Rice Flour, White Rice Flour, Corn Starch, Buttermilk, Granulated Honey, Baking Powder (Corn), Sodium Bicarbonate, Salt, Xanthan Gum.

Directions
For Pancakes or Waffles You'll Need: 1-1/2 cups Pancake Mix (1/2 bag); 1 egg; 1 cup milk; 3 tbsp oil. Combine ingredients. Stir to dissolve lumps. Preheat griddle or frying pan to high. Lower heat to medium. Lightly brush surface with oil. Drop batter onto cooking surface. When tops of pancakes begin to form bubbles, flip and cook another 2 to 3 minutes. Serve with maple syrup or preserves. Yields 16 pancakes or waffles. For richer waffles, use 2 tbsp melted butter in place of oil.

This was one of my first purchases of a "bread-type" product after being diagnosed with celiac sprue disease this past November....so, you can imagine my delight when the waffles I made with this mix turned out, not only be edible, but were actually fabulous!! I ordered the 6-pack & can't imagine not having it on hand! My kids even try to talk me out of these...I have to hide them behind other items when I freeze them. They are great for making ahead and packaging in individual serving-sized zippered bags to be toasted later!

This brand (apparently owned by the same company that makes the 'Glutino' brand), is absolutely the best that I've tried. There is no strange aftertaste like some other brands.

Here's my suggestion that makes these pancakes even better:
When you are mixing, add in about a teaspoon of 'Pumpkin Pie Spice', and another teaspoon or so of vanilla. YUUUMMMMM!!

My daughter is sensitive to wheat and this is her favorite food! Even if/when she grows out of this sensitivity, I'll continue to make these panckaes - They're DELICIOUS!!!

This is one of the better pancake mixes. I mix a half cup of this mix with a half cup of Pamela's pancake mix, one ripe banana, cinnamon, 1/4 cup of almond meal, plus eggs, oil and milk as called for and the pancakes are amazing. I serve them to non-celiac family during visits and they love them.

Keep some of this mix on hand for great-tasting pancakes and waffles. You may have to fight your non-gluten-free family members for it.

I can no longer make the best, greatest tasting GF Irish Soda Bread with this mix! I wrote a rave review in 2009, when this was the Gluten Free Pantry's Brown Rice Waffle & Pancake Mix. Glutino purchased the company and totally RUINED this mix!!! What a huge disappointment. The soda bread recipe was no longer on the label, but I found it on the Glutino website. Before baking the mix tasted the same but I noticed it was a little more difficult to spread into the pan. And then we cut into the final product. Grainy texture, kept falling apart, crumbly--a total disappointment. I'll have to look for a different mix or recipe. Bummer.

I bought these at my local natural grocery store because they didn't have my standby, GF Bisquick, and I thought I'd branch out from my second favorite, Bob's Red Mill. While these pancakes taste great, they are the worst texturally that I've ever made. The first one I made crumbled when I was trying to flip it. I made the others smaller, but they still were difficult to flip and had a crumbly texture when cutting and eating. They are also impossible to make vegan due to the honey and buttermilk in the ingredients, if that's important to you.

I recommend GF Bisquick if you want something light and fluffy with a perfectly and gently crisp outside and Bob's Red Mill if you prefer the denser, richer, homemade taste.
