Where do they get these prices?

You can get this at your local grocery for 2 to 3 dollars.

If you're looking for a great way to thicken gravies without making a fattening rue with butter, here's your answer -just mix 2 tbs. with 1/4 cup water, mix with 1 cup broth and you have instant gravy - no lumps, no problems - great stuff . . .

First let me note that I can purchase this locally, so my review is not going to address price, shipping costs or other factors not related to the flour itself.

Long ago I learned that all purpose flour is virtually useless for making smooth bechamel sauces - or any sauce or gravy for that matter because if you did not take care it would lump up. Worse, there is a magic tipping point where your sauce or gravy can actually turn into a runny dough if you are not careful. For this reason I usually pay a premium to have a flour that works on hand: Antimo Caputo Chefs 00 Flour. I discovered this 'Wondra' flour when I ran out of my good stuff. I had company coming and a white sauce on the menu, so during a quick trip to the store I spotted this. I was skeptical, but purchased it (and a bag of all purpose four to be safe.) End result: this is amazing flour for making sauces and gravies.

What I especially love is how this quickly and easily thickens a bechamel sauce (butter, flour and hot milk or cream) without lumping or turning thick and doughy. The key word here is quick because had I used all purpose flour and rushed it the sauce would have been ruined.

Is there a difference between my preferred (and expensive) imported flour and this? Yes, the imported one imparts a slightly different flavor (to my palette) that enhances the sauce. Or it could be my imagination. However this is as good when it comes to actually preparing the sauce - better actually because I still had to exercise care with my imported flour.

This is an essential in your pantry if you often make sauces and gravies, and is, indeed, a wondra as far as I'm concerned.

At Safeway, this is $3.99, so what gives with over $11 for that little container? I went back to see because I thought maybe it was like ginormous size or something. Crazy, who came up with this.

This is a wonderful flour for making smooth sauces. It doesn't lump. The only thing is this price on Amazon is three times what I pay for it at my local store! That's insanely expensive.
