Although I have heard some accuse 'Good Eats' of being the 'Sesame Street' of cooking shows, to those I would answer that's perfectly fine. Before you get to your 'Sixty Minutes' or 'Masterpiece Theater', you did have your 'Sesame Street' days. Alton Brown, chef and self-professed technician, also does what very few chefs, including Gordon Ramsey of Jamie Oliver or any of the others do. He teaches, and he makes it fun. By the end of it, you get the feeling you might be able to pull off some of his dishes, unlike other shows that are fabulous to watch, and then I go out to a restaurant and order the dish because there's no way I'd be able to do it in my kitchen. Thank you AB for giving us kitchen chickens good technique, great info, and a little courage to try scary food!

Seems like this should have been a two-part episode, as Brown appeared rushed and the episode was obviously edited. He did touch on all the important aspects of coffee though, from the plants to roasting to brewing.

I would have liked to have seen more on the various brewing methodologies and their histories, particularly espresso makers and vacuum pots. We've all been trained to accept drip coffee as the norm when there are actually numerous other methods that provide a better tasting brew, and some (like perculating) that do not.

All in all a good episode though, worth watching.

This is a great series for anybody who wants to learn the how's and whys of cooking and baking. Alton Brown knows exactly how to slip in just the right dose of chemistry with wit and humor.
