I recieved this book last Christmas and have been using it ever since. I am a senior in high school and am planning a career in the baking and pastry arts field. I have taken my book to school to use as a reference tool. Only to find out that my teacher loves it so much he doesn't want me to take it with me when I graduate. I have actually used this book to come up with many products for our many functions and compitions. I can not wait to take this book with me to college.

I bought this cookbook about ten years ago and have found it to be the one cookbook I can always count on. Everything I've made from it has been delicious. I like to keep an extra copy on hand so I can give it as a last-minute gift. I definitely recommend this cookbook to beginners, because the directions are easy to follow.

This is a baking book for intermediate home bakers, which is about where I'm at with this rather tricky art form. Both the techniques and the ingredients are thoroughly modern.

I'll say up front that there is a more "convenient" baking book available: The America's Test Kitchen Family Baking Book (see my full review); however, the recipes themselves in that fine work are not necessarily better so your choice of either baking book would be an equally good one.

The instant book features two important sections, one on equipment and one on ingredients. Those new to baking will find these explanations especially illuminating. There is no Table of Contents but there is a nice index where you'll easily find what you're looking for. This work covers the following baking pursuits:

-- Cookies
-- Quickbreads and Crackers
-- Yeast Breads (including pizza crusts)
-- Soufflés, Custards & Baked Desserts
-- Pies and Tarts
-- Specialty Pastries (e.g., "Cream Puffs" and "Éclairs")
-- Cakes
-- Frostings, Fillings & Flourishes

Every old stand-by baking recipe that you'll need is in here. There's a particularly good selection of chocolate cake recipes as well. And, of course, you'll find the obligatory conversion chart in the back of this nicely-bound, hardcover book. In all there are over 600 recipes and 384 pages. The work is profusely illustrated with helpful color photographs of the dishes and of key techniques.

It would be difficult to find a better baking book than this one. It would also make a fine gift.
