Good for Beginners to Organic, Healthy Eating,

There is a lot of information in Gorgeously green Diet about healthy eating and it is useful for those people used to eating processed food. Uliano, who wrote Gorgeously Green and appeared on Oprah, writes: "Unless the food you eat is minimally processed and packaged, unless its Gorgeously Green--it is likely to be lacking in vitamins and loaded with toxins that could inhibit metabolism and lead to obesity."
Uliano discusses how making even small changes in ones diet can help impact the health of the planet. She advocates "moderation," and tells the reader that she is a flexatarian. She offers three diets in different shades of green--light, medium and dark. Each diet covers a week's worth of menus. There is a section on composting and gardening. According to Uliano, a 2007 Cornell University study showed that an all vegan diet had more effect on the planet than a diet containing a daily 2 ounce serving of meat. The book outlines how to select the best types of food--grass fed beef, vs. feedlot, for example. This is very useful for newbies and she covers virtually all choices. Suggestions are made on how to pick food at a restaurant and include a variety of places. She suggests what to get rid of in the pantry and what to stock. There was a chapter on cooking the basics likes stocks tomato sauce--all perfect for beginners. There is a section on fitness, beauty & health and what vitamins to take. One chapter was on inviting your dream guests for dinner--I found it bizarre--and her list included Shakespeare, Jesus, Julia Roberts and Oprah. Somehow, can't see that group together... There is a nice sized section of recipes. The book concludes with resources on where to find food that Uliano likes and it is quite helpful for those unaccustomed to grocery shopping outside the traditional stores. I do question her authority on some of the statements she makes, as she is neither a doctor nor a nutritionist,but her diet recommendations seem fine and are certainly not extreme. Uliano covers a lot of ground in this book on food and recipes. I love the idea of different shades of green for eating plans and diets, let alone the idea that being green is saving money and the planet. the shopping lists and ideas for getting your kitchen in shape are eye opening.
I went straight to the recipes and found that they seem easy to follow and are not as frightening to cook as your average cook book. The book is also very engaging and easy to read, not preachy about green or anything like that. this book is full of info. from shopping, to fitness and the eating plans and lists. much more than I expected and it is easy to read. pretty happy with this one so far.

This book is very helpful even if you are not ready to go completely green. There are 3 different levels depending on the time, money, and energy you have to dedicate to it. There are even shopping list that are already written out in the book for each level. So no matter where you are in your commitment to going green there will be a plan that will work for you. Every little bit helps, as Sophie Uliano points out. There are also many resources on where to find the different foods that you may have trouble getting. Mostly though everything is reasonable easy to get. There are many websites that she also list, many of which have a store locator on them. Plus she includes many wonderful recipes that are not too time consuming to make. I highly recomend this book to even those of you who are just wanting to test out the waters of going green.

I hate to say it but...I grabbed this book from the library. :-) BUT, I'll NOW be buying it! For so long, I've been looking for easy recipes and a book with a simple shopping list to just have an easy, healthy diet. VOILA!!! Here it is! I'm very impressed with this book. I've not even read the whole thing and I'm totally blown away by its ease of use and wealth of information.
There is ONE thing I'd like to comment on, though...it suggests canola oil as an oil option. I just want to make people aware that a significant amount of consumers have allergic reactions/sickness related to canola oil (and they don't even realize it) - so do your research before using it!!! Just google "canola oil side effects" or "dangers" and you'll find an entire list. Canola oil is a genetically modified rapeseed oil. "Claims of several human health side effects from canola oil are loss of vision, disruption of the central nervous system, respiratory illness, anemia, constipation, increased incidence of heart disease and cancer, low birth weights in infants and irritability...Rapeseed oil used in China for stir-frying produced highly carcinogenic smoke. According to The Wall Street Journal on June 7, 1995, an increased incidence of lung cancer occurs in people who breathe the smoke...From 1986 until 1991, rapeseed was used in animal feed in England and Europe; its use was halted in 1991 when studies indicated health problems directly related to it. Problems subsided when it was no longer used." For instance, here's some info on eHow: [...] Otherwise, this book is one of my favorites and I really feel is the only cookbook I need. As an amateur culinary-extraordinaire who is headed for minimalism, I'm actually going to sell all the others on Amazon! Thanks so much for this book Ms. Uliano. You rock!

This book is amazing. She explains how easy it is to be green while dieting and being able to do it on a budget. I have tried a few of her recipes and they are outstanding. 5 stars.

Just a note,

I liked this book for the most part, but was surprised at a couple things. She says seitan is a fermented soy product, when in fact it has no soy in at all (it's made of Vital Wheat Gluten, which is why seitan is nicknamed Wheat Meat). Also, in her weekly meal plans she has nonvegan items in the "Vegan Option." I know many nonvegans consider honey vegan because some vegans do use it, so that wasn't terribly surprising, but she also says to use whey protein powder. It just made me question her knowledge of the food she's eating and writing about. Didn't her editors catch that?
