Product Description

Easily perform big or small kitchen cutting tasks with this Gourmet vegetable knife from Wusthof. Featuring a chrome-molybdenum-vanadium steel blade for long lasting durability, it is forged from a single piece of tempered high carbon steel to ensure outstanding strength. With Precision Edge Technology that provides extraordinary sharpness and 30 percent longer blade retention, this knife is resistant to odor absorption and staining. Perfect for slicing, dicing, mincing, and chopping vegetables, the blade features cut-outs that prevent sticking, while the triple riveted ergonomic handle is made from durable synthetic material. Backed by a manufacturer's limited lifetime warranty, it also has a bolster that acts as a finger guard and provides a solid balanced feel.

I am left handed.

The hollow blade makes sticking virtually a non-issue, as does the ridge.
Mary Feltman
Best knife for slicing onions, tomatoes, etc. without sticking to blade.

It looks good while doing it, too. No more (dangerous) swiping the blade to get the chopped or minced veggies unstuck. They just don't pile up the blade. My go-to knife for so many chores!

Solidly constructed knife, obviously a hallmark of the Wusthof brand. Lighter than some of the other Wusthofs I've used - as I normally work with lighter Globals this was a welcomed surprise. This has been my work knife for the past few weeks and I don't have too many complaints about it save for the fact that the manner in which I often cut (that is, with a "claw" like grip on some foods that are harder to stabilize) causes the holes in this knife to chafe the middle part of my middle finger (which I use as a sort of guide when chopping/slicing).
Also, and this is a minor thing not really affecting the utility of the knife, but after only about 2 months of use the red "W" brand on the handle/grip of the knife has totally rubbed off. It's just a little silver square now. Thankfully, the blade is branded but still. Slightly sucky.
Overall, I'm not "wowed" by this knife, but cannot find any significant defects either. The special design of this blade is fairly successful at what it claims to do.

I have a very good set of Henkel knives. However due to senior years and arthritic joints I needed a knife that would be light and easy to use. This knife has a comfortable and easy grip, it is not heavy, and is superb for chopping and fine slicing. I recommend this as a must have in any kitchen.

The rib is only on one side so if you are left handed it might not work. But I find it very effective and no more swiping my knife across the top edge of the pan or pot to clean it off.

It is clearly stated in the description "for right handed users only" but just in case you missed it and you are left handed DO NOT order this knife. Hopefully this will help someone not make a mistake. Happy cooking!

This is the sharpest knife i own. Great on vegetables but is for right hand use. I prefer it over the Analon knife I own and is just as good as the Henckels Santoku of the same size.

I tried using my regular chef's knife after using this one for awhile and the difference is remarkable. I really noticed how my regular knife drags and creates suction with whatever I'm cutting. I realized this is why this knife (and also to some extent a santoku knife) are easier to cut with, which makes prep work more enjoyable.
I haven't cut a lot of meat with it but I would use a meat blade not a chef's knife for that anyway (and it is called a vegetable knife!)

It's too bad about the left-handed issue but if you are right-handed, it's great! Oh, and just to note, this knife is in the lower end Gourmet Classic line, not the heavy forged line some people are used to. I prefer this line as it is easier on my wrist. And it's still a Wusthof with a lifetime warranty, so who cares if it's not the give-you-carpal-tunnel iron weight of the forged line?...Happy cutting!

Nice knife if you are right handed as the dimple that removes the sliced vegetables from the blade is on the right side,
