I struggled to decide between the thermal model and this model, and eventually purchased this model. I have used the thermal model in the past, so I was able to compare the two when I got my new one. Unless you are a true professional, requiring extended hot and cold whipped contents, the non-thermal model (this one) is actually the better of the two units. For one, it is significantly smaller than it's thermal brother, yet holds the same amount of liquid (.5L). Therefore, it fits in the refrigerator better, and is easier to manage for shaking, and dispensing. Secondly, the benefits of the thermal model are only noticeable if you keep it stored permanently in your refrigerator (empty), and pull it out when you want to use it (for cold contents). I don't need to keep cold whipped cream on the table for four hours, so I enjoy storing this unit in the cupboard. A simple hot water bath will keep your non-thermal contents warm for extended periods.

There is nothing better than home-made whipped cream, and mousse. This device will make that process so much faster, more consistent, and will allow you to store the contents neatly and cleanly while you use it. You won't believe the improvement and ease of use until you use one yourself.

Exceptional construction and materials, well worth the price.

5.0 out of 5 stars In for a good whipping!, August 10, 2011

This sturdy siphon is exactly what you need to make foams and produce light mixtures, of which chantilly is the model. It keeps the gas well, it makes it easy to to serve its contents either in bulk, applied in elaborate details or as filler of pastries or other food. While many of the foams can be produced by hand as they have been in the past, the user of the iSi whipper enjoys the advantage of being able to store the preparations in a far easier and cleaner manner as well as for longer periods. As a professional tool that can be used by aficionados without any difficulty its presence represents an upgrade in the ranking of any kitchen.

1.0 out of 5 stars Leaks gas from dispenser, August 18, 2011

Out of the box, added 1 pint of heavy cream, 2 tablespoons powdered sugar, 1 teaspoon vanilla. Charged OK. After dispensing a small amount, the dispenser began leaking gas. Continued until the container was empty. (The red screw on dispenser tube, which is required for proper operation, was attached properly and fully screwed on.)

This Gourmet Whip model uses a different valve design than the Cream Profi Whip. Although the cap is advertised as "all metal," the dispensing valve seal is formed with a screw on plastic piece and o-ring. The gas leaks either because the seal isn't tight enough, because of the shape and quality of the plastic piece that holds the o-ring, or because of a combination of both factors.

I also ordered a Thermo Whip. That model uses the same cap as the Gourmet Whip. I experience the exact same issue with the Thermo Whip. So, to me this seems to either be a design flaw or a manufacturing defect (or again, a combination of both).

I **also** ordered a Cream Profi whip. This model performs very well with no issues.

I have an ISI whip cream dispenser that I bought in 1985, which uses the same basic design as the Cream Profi whip. It still works flawlessly.

I am quite blown away by the fact that the Thermo Whip and Gourmet Whip are supposed to be "commercial" "food service industry" models, and are supposed to be able to handle a wide variety of hot and cold ingredients. I just can't see that happening based on my experience.

I will be returning both the Thermo Whip and Gourmet Whip for refunds. I will be keeping the Cream Profi Whip.

5.0 out of 5 stars Works Flawlessly With No Leaking Problems, January 5, 2012
This review is from: Gourmet Whip - Brushed Stainless - Pint
I added the iSi Creative Whip to my Amazon wishlist after seeing Jeff Potter (Cooking for Geeks) make cake in the microwave in 30 seconds. I ended up getting this model for Christmas because the creative whip was sold out. Needless to say, I am very pleased with it.

If you follow the instructions and make sure the o-ring on the valve is fully seated before charging the whipper there are no leakage problems as stated in another review. I've had mine in the refrigerator on it's side for days with no leakage. The problem the other reviewer is having is most likely due to operator error.

Besides making whipped cream, you can make a ton of really cool stuff with this whipper. Just google espumas and cream whipper cooking.

5.0 out of 5 stars I was amazed, November 22, 2011
This review is from: Gourmet Whip - Brushed Stainless - Pint
I really didn't know what to expect. I did know that whipping cream by hand, while not a lot of work was a chore I could do without when trying to prepare dinner for guests, so I splurged on one of these.

I am very impressed. The cream is thick and and has more body than it does when you whip it and the presentation is beautiful. Never having used one before I whipped up a batch of strawberry short cake for dessert one night and tried it. I made my usual whip cream mixture - heavy whipping cream, little sugar and vanilla extract, sealed it up and put the gas cylinder in.

I really didn't know what to expect. Would it gush out? Sputter, I had no idea.

Upon using it I was amazed at the smooth flow, the easy use and the viscosity of the cream mixture. The cream was easy to apply (too easy, stay tuned) and flowed on very easily with perfect peaks and a beautiful presentation using he middle nozzle.

What I learned. The thickness and the body of the cream is amazing. I don't know the best way to say it but the cream is much denser then if you hand whip it (or use a prepared can) and you have to be careful in the application or you will put a amazing amount of cream on on your dessert. The two big surprises, the amount of cream and the smoothness of the operation. I urge any new user to try an application or two to get an idea of the amount you get and the usage pattern so you can get the portions right.

Very impressive device
