I am enthusiastic about this book, because it has clear, straight-forward directions to make delicious dishes. The author worked his way up from being an apprentice in Paris to being the top chef at the Ritz-Carlton in New York. He has a few charming stories of cooking for kings and the like. I have made several of the dishes in the book. I will try some more.
