This is a true sofrito with mainly the same ingredients I use when I make it from scratch (and some I would prefer to leave out.)
The flavor is a nice balance among the tomato paste, peppers, garlic and onion, and spices. In fact it's so perfectly balanced that I measure my homemade flavor against this one. However, there are a few things of which you should be aware. Foremost is that it contains MSG (monosodium glutamate). If you get a reaction from that then you may want to avoid this particular product.
Another red flag is that it contains 2565 mg of sodium per twelve ounce jar, which can be a problem for people on a low sodium diet. Finally it contains soy that can cause reactions in some people. These do not necessarily detract from the quality and flavor of this sofrito, but you should be aware of their presence if you or anyone in your family has issues with them.
As I mentioned I often make mine from scratch, but there are times when I need to whip up a dish quickly so I keep a few of these in my pantry for those occasions. It's perfect as a base for stews and soups, for basting fish before broiling or cooking it en papillote style, and even for adding to salsas and bruschetta to impart an ineffable flavor that never fails to please my guests.
and Mexican dishes.
Sofrito is a basic tomato sauce that is made all over Spain. Tomatoes, onions, garlic, green
peppers and olive oil are sautéed in a frying pan, so that the acid in the tomatoes mellows and
mixes with the flavors of the onion, pepper and garlic. It can be eaten with rice or eggs, but often
it is used as an ingredient in other dishes, such as chicken and pork dishes or the filling for
This is a great shortcut and the flavors of the onions, coriander, and garlic blend nicely. However
this former 5 star product gets dinged one star for soybean oil and other ingredients that were
not present in this Goya classic not long ago....I also see MSG in there now and many people are
sensitive to that so mind the ingredients before you buy.
