This sauce is unique for Jamaican hot sauces because instead of that slow burn and spread heat from scotch bonnets this has a bite that immediately grabs you. In fact I am not sure if the peppers are Scotch bonnets (the label lists 'crushed red peppers' without a cultivar.)
In addition to the heat this sauce has an excellent flavor. My immediate reaction to the first taste was bite and heat, with a bit of tartness and hint of sweet, and a slight saltiness. The overall savory flavor completed the flavor profile and quickly made this one of my favorites.
It is certainly not the hottest sauce, but it will hold its own in a blind taste test. I enjoy it because I can have a lot of spiciness and flavor. It's also thick, making it perfect for stews and soups (among other dishes). And while I suspect that the peppers are something other than Scotch bonnets there is a hint of fruitiness to the flavor.
The ingredients are fairly simple: crushed red peppers, cane sugar, salt, citric acid and modified food starch. The tartness comes form the citric acid. The salt is light because this sauce has only 30mg of sodium per teaspoon, of which my cardiologist would approve.
Bottom line: if you want something a little bolder in a Jamaican hot sauce this is definitely the one to try. As far as thr Grace brand I have to say that after trying all of their sauces this one is - by far - the hottest and it does not sacrifice flavor for heat.
