Book Description

June 1, 1997 Great Series
The juiciest entry yet in our tall, skinny, and oh-so-successful Great series (other strong sellers in this intriguing gift format have included Mark Miller's GREAT CHILE BOOK and GREAT SALSA BOOK, Jennifer Trainer Thompson's HOT SAUCES and BEER books, and others). Now-renowned chef Allen Susser, one of new-world cuisine's most exciting innovators, not only demystifies almost 100 citrus fruits (with accompanying full-color photography) but offers dozens of fresh, taste-tingling recipes for everything from Ginger Grilled Grapefruit with Orange Blossom Honey to Lemon Red Snapper with Spicy Green Coconut Rice, Sour Orange Game Hen with Plantain Fritters to Frozen Key Lime Pie. A sun-splashed eye-catching treasure.

Editorial Reviews

Review

Summer lemonade stands, oranges in Christmas stockings, lime margaritas and breakfast grapefruits mean "citrus" to most people. This concentrated reference and cookbook extends our knowledge of Genus Citrus' eight major species (plus Genus Fortunella's kumquat) in great detail with history, geography, climate (the key to how the fruit develops), appearance, nutritional value and recipes. Lois Ellen Frank's clear photographs of the 102 varieties are paired with descriptive paragraphs. Cutlines give little-known facts like this one: The history behind the name of the juicy Parson Brown sweet orange is a nod to the man who discovered the variety - a Reverend Brown found the original seedling in 1856. Chef Allen Susser's specialty is New World Cuisine (American, Caribbean and Latin cooking) and it influences the 38 unique recipes. His ability to transport recipes from the Old World into the new cuisine is showcased with Shrimp Bigarrade, inspired by Escoffier's Duck a la Orange; while Lobster Hash substitutes lobster for beef and sweet potatoes for white potatoes. Portobello mushrooms stand in for the fish in escabeche. No citrus cookbook is complete without original recipes, and The Great Citrus Book again offers some new versions of old favorites: Frozen Key Lime Pie, Blood Orange Marmalade and Lemon Meringue Kisses with Lemon Curd. The Great Citrus Book is a sunny addition to any cookbook shelf. -- From Independent Publisher

Amazon Verified Purchase(What's this?)
This review is from: The Great Citrus Book: A Guide with Recipes (Great Series) (Paperback)
I actually bought this book on sale and returned it thinking I wanted something else. HA! It took a long time to find it again as I forgot the exact title. I now have a copy and it is very interesting and a treasure to have.

Fun Citrus Fact (not from the book): The name "apple" in the middle east in ancient times was the name for all citrus, so the garden of Eden (e.Din) was obviously a garden containing citrus and Eve's apple was probably simply a lemon. Remember, Adam's rib in Sumerian has 2 meanings: one for rib and one for genes.

Fun Citrus Fact (not from the book): The lemon is the most healthy human food as it is the most acidic fruit which is very helpful in our stomach which does not have enough acidity. In the intestines it turns alkaline which is very helpful for the bacteria which process foods.
Many Blessings,
Ken
