Julee Russo's taste in food and mine are often very different, and the access she has to certain ingredients is far larger than mine, owing to her living near more sophisticated markets, but this time there were enough really good dishes in this book for me to be glad I bought it. Three Glass Chicken, Cream of Flagolet Soup and Broccoli with Green Sauce have all become family favorites. The composition of the recipes were variations that I wouldn't have dreamed of without her putting pen to paper. I was prepared for the time consuming preparations of her former cookbook, but there were mercifully fewer of those. Since this book is designed to make "gourmet" more healthful, the little bullets of information in the margins had more to do with useful health facts that I really appreciated learning. Her Good Times Cookbook was, for me, the recipe equivalent of a frog pond, but this book contained more than a few "princes"!
