This flour was a lot more dense and heavier that I was expecting, therefore its making it difficult for me to bake a decent loaf. Since combining it with some normal white flour I have had some better luck, but it may take some trial and error.

Overall good flour, but I am not convinced it is any better or worse than other brands, and therefore worth the price premium. I guess I just expected to be WOW'd given the brands reviews... its not bad, but just not what I expected either.

This I evidently mistook to be ordinary bread flour made from wheat. What I got was 20 pounds of Whole Wheat Flour which I have no need for and can not return.

The label should have read: Unbleached Whole Wheat Bread Flour.

I bought this flour 1. because there was free shipping and 2. because organic flour in my area is either bad or very expensive. I was hoping it'd be good but I was thrilled to discover it is excellent. I use it in the famous "no knead bread" My Bread: The Revolutionary No-Work, No-Knead Method and for most the recipes in Artisan Bread in Five Minutes a Day: The Discovery That Revolutionizes Home Baking. It has a great flavor and a nice rich color. It is heavier than your standard white all purpose but if you like to make these artisan types of bread at home I highly recommend this flour and will be buying it again. I hope it is added to the subscribe and save program!

Best flour I've ever used in the bread machine. High gluten content yields a loaf with a great crumb and uniform raising. Makes the added expense worth it.

I bought this thinking I would use this instead of the King Arthur Bread Flour that I normally use for my bread machine. I was mistaken. Its too dense and the bread does not rise in the bread maker. I now use this as I would whole wheat flour. I have better results when I mix this 50/50 to bread flour. They should have labeled this as whole wheat flour.

This bread flour is not quite unbleached, not quite whole wheat, but has a wonderful character of its own. I bake all kinds of bread and rolls several times a week, and I am hooked on this flour. It's perfect for artisan breads - particularly something like a sourdough or any bread that uses a fermented leavening process. I'm hooked.

Excellent flour. Acts like Type 85, high extraction flour. This type of flour makes a superb mixed flour miche from Jeffrey Hamelman's [ASIN:0471168572 Bread: A Baker's Book of Techniques and Recipes]]. I have not found anything similar anywhere in a reasonable size bag.

I wasn't sure what to expect with this flour, and assumed I was going to have to mix it with whole wheat flour to make a more substantial loaf of artisan bread. It turns out, it is like nothing I have ever bought before, being more like a light whole wheat that gives you some of the properties of a white flour but still has the nutty branny flavor and texture. I am definitely sticking with this flour and telling my friends about it. It's like a hybrid mix of white and whole wheat flour and makes an excellent loaf of bread.

Used this flour with the Panasonic Bread Machine and Panasonic recipe for Multi-Grain Bread. Recipe includes flour, 6 TBS added Grains (I use King Arthur Grains), Dry Milk, Molasses, Water, salt, and yeast. Better than any Multi-Grain Bakery Bread. And toasted it is wonderful!!
